National Noodle Day!
Whether you like them boiled or fried, in soups, salads, or entrees with sauce, noodles are popular the world over. It's no wonder: dried noodles are quick to prepare and give you a concentrated carb fix to provide energy.
I found this recipe for Tuna Noodle Casserole which is quite different from the one I usually make so I thought that National Noodle Day would be a great time to share it with you all. Forget the canned soup. This quick and healthy tuna noodle casserole turns pantry staples into a skillet supper in a flash. Serve with a tossed salad.
8 ounces whole-wheat egg noodles1 tablespoon extra-virgin olive oil
1 medium onion, finely chopped
8 ounces mushrooms, sliced
1/2 teaspoon salt
1/2 cup dry white wine
6 tablespoon all-purpose flour
3 cups milk
1/2 teaspoon freshly ground pepper
12 ounces canned chunk light tuna , drained
1 cup frozen peas, thawed
1 cup finely shredded Parmesan cheese, divided
1/2 cup coarse dry whole-wheat breadcrumbs
Bring a large pot of water to a boil. Cook noodles until just tender, 6 to 8 minutes or according to package directions. Drain and rinse.
Position rack in upper third of oven and preheat broiler.
Meanwhile, heat oil in a large ovenproof skillet over medium-high heat.
Add onion, mushrooms and salt and cook, stirring often, until the onion is softened but not browned, about 5 minutes.
Add wine and cook until evaporated, 4 to 5 minutes. Sprinkle flour over the vegetables; stir to coat. Add milk and pepper and bring to a simmer, stirring constantly.
Stir in tuna, peas and 1/2 cup Parmesan until evenly incorporated. Then, stir in the noodles
Remove from the heat.Sprinkle the casserole with breadcrumbs and the remaining 1/2 cup Parmesan. Broil until bubbly and lightly browned on top, 3 to 4 minutes.

I've had many breathtaking moments in my life. Having grandchildren has given me many of them. Each one is so precious. I love seeing my children as parents too. They all are good and loving parents and that is a wonderful thing. In today's world children need all the love and support they can get. Having a family is a blessing.
One of my internet friends does a post on God wants you to know...and I loved the one from yesterday so am sharing it with you all today
On this day God wants you to know that when the sun rises, it rises for you. Yes, for you, Just for you. You are it, everything, the whole universe with all the billions of galaxies and stars... Now that should make you feel very loved and special. You are!
PRAYER REQUEST
Please join me in praying for DS#1 and his brothers that will be traveling for his special '40th' birthday celebration this weekend. All but one of my sons and and DSIL are hoping to have a wonderful 4 days in the sun. May the dear Lord bless them with a safe and happy trip.
I'm also praying for DDIL#5 as she is down with a bad case of bronchitis and I'm here at their house watching our Little Mr. Wonderful as his dad is one of those gone on the birthday weekend. May the dear Lord bless her with healing and a speedy recovery.

Lovely words from your friends blog Ma.Prayers are said for safe journeys for the boys for a speedy recovery for your DDIL and also "A Very Happy Birthday" wishes over their I send.
