COLUMBUS DAY

In fourteen hundred and ninety two Columbus sailed the ocean blue.

Columbus day is a public holiday in many parts of the United States, but is not observed or is not a holiday in some states. Government offices, banks and schools are generally closed, but businesses may be open. The flag of the United States is displayed on Government buildings

In 1937, Columbus Day become a holiday across the United States. And since 1971, it has been celebrated on the second Monday in October. 

Every ship that comes to America got its chart from Columbus.

NATIONAL ANGEL FOOD CAKE DAY

It's National Angel Food Cake Day, a time to honor this low-guilt dessert popularized in the 19th Century. Maybe its light, airy texture and the fact that it is low in fat are the reasons it's called angel food. Maybe it's because it is baked round with a hole in the middle, like big fluffy halos!

CINNAMON APPLE ANGEL FOOD CAKE

12 egg whites
1 1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cup confectioners' sugar
1 cup cake flour

Glaze
1/3 cup butter or margarine
2 cups confectioners' sugar
1/2 teaspoon cinnamon
3 tablespoons apple juice or apple cider

In a mixing bowl, beat egg whites, cream of tartar and salt on medium speed until soft peaks form. Add sugar, 2 T. at a time, beating well after each addition; beat until smooth and glossy and stiff peaks form. 

Add extracts on low speed. Combine confectioners sugar and flour; gently fold into egg mixture. 

Pour into an ungreased 10 inch tube pan. Bake on the lowest rack at 375 for 35 to 40 minutes or until top crust is golden brown and cracks feel dry. Immediately invert cake in pan to cool completely. Loosen sides of cake from pan and remove. 

For glaze, melt butter in a saucepan. Stir in the confectioners sugar and cinnamon. Add apple juice slowly until glaze is thin enough to drizzle. Drizzle over cake.

More and more it seems I discover something new every day.  The older I get I find there is more and more to learn.  I read someplace that you are really never old as long as you are learning.

After a positively beautiful weekend at the camper I'm home today with plenty to do as usual.  Hopefully the chores won't keep me indoors too much as we are going to have another warm and sunny day here and I want to be out enjoying it as much as possible.

PRAYER REQUEST

Please join me in praying for DDIL#4's parents as they are both now in the hospital.  As far as I know she is going to go to help them out again this week.  I'll be praying for healing and good health for them both and also strength and for my DIL as she helps to care for them.

COUNTING THE DAYS
