NEW IN THE KITCHEN

Applesauce Cake Day is a time to enjoy an old and often forgotten goodie. This is a truely delicious day.

It doesn't take much to enjoy Applesauce Cake Day. Just eat a piece of applesauce cake. The only problem is finding it. If you're lucky, a bakery or a restaurant will pick up on this day, and offer it as a special today. Otherwise, you may have to make an applesauce cake from scratch.

Easy Applesauce Cake

1/4 c. sugar
1 2/3 c. applesauce
2 tsp. cinnamon
3 eggs
1 (17 oz.) pkg. Yellow cake mix

Blend sugar and cinnamon. Grease 10 inch bundt or tube pan and dust with about 1 tablespoon of sugar-cinnamon mixture. Blend cake mix, applesauce and eggs until moistened. Beat as directed on package. Reserve 1 1/2 cup batter and pour remaining batter into pan. Sprinkle with remaining sugar-cinnamon mixture; then top with reserved batter. Bake at 350 degrees for 35 to 45 minutes or until done. Cool 15 minutes top side up, then invert on serving plate.

Once in a while I drive by the house where we used to live. The house where my children did a lot of growing up. The memories in my heart of the ones I love and what happened there over the years made that house a home. Those memories also remind me that home means more than a place... it is all about my precious family

I remember when the babes would say, But, Mom, everybody's doing it. Then
I'd reply, So if everybody was going to jump off a bridge, would
you do that too?

Growing up isn't easy and being a parent wasn't always easy either but the memories I have are all good ones. Now I have a different house, my children all have their own homes and I hope that they too will have nothing but good memories!
