ON THE BRIGHT SIDE
JUNE 12th, 2011
If you can't see the bright side of life, polish the dull side
It's SUNDAY!
RED ROSE DAY!
Red Rose Day is a time to enjoy and appreciate America's favorite flower.....the red rose. A red rose signifies love. A June setting for Red Rose Day is very appropriate, as this is by far the most popular month for weddings. And, they are in bloom in the gardens across America this month.
In addition to being the most popular cut flower, roses are also the most popular flower in flower beds and around foundation of houses, garages and sheds. They are easy to grow, producing a bounty of sweet scented flowers from June up to the first frost.
Celebrate today by buying red roses for someone special or for yourself or planting roses around your yard.
Roses are red,
Violets are blue;
But they don't get around
Like the dandelions do.

PEANUT BUTTER COOKIE DAY
When you hear the word cookie, your first thought is probably of chocolate chips. But peanut butter cookies have a tradition and following that warrants an official Peanut Butter Cookie Day. Peanut butter cookies, we salute you!
Peanut Butter Pretzel Cookies
1 1/2 cups flour
1/2 teaspoon baking soda
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 1/4 cups sugar
1 cup smooth peanut butter
2 eggs, at room temperature
1/3 cup unsalted roasted peanuts, chopped
6 cups miniature pretzels, chopped
Line 2 cookie sheets with parchment. Position racks in the upper and lower thirds of the oven and preheat to 350°. In a bowl, whisk together the flour and baking soda.
Using an electric mixer, beat the butter, sugar and peanut butter on medium speed until fluffy, about 5 minutes. Add the eggs 1 at a time, beating well after each addition. With the mixer on low speed, gradually add the flour mixture, beating until just combined; stir in the peanuts.
Place the pretzels in a bowl. Using a 1 1/2-inch-diameter cookie scoop and working in batches, drop a few balls of dough in the bowl and toss to coat. Place the cookies on the prepared pans. Bake, rotating the pans after 10 minutes, until golden but still soft to the touch, about 15 minutes. Let cool slightly before transferring to racks to cool.

AROUND HOME
O, my love is like a red, red rose,
That is newly sprung in June.
O, my love is like the melody,
That is sweetly played in tune
Robert Burns
I do love the month of June! It's the beginning of summer and what we hope will be much nicer days. I love the warmth and sunshine, but here we sure have had a lot of rain.
We spent a rainy Friday night and Saturday evening at the camper. Today the sun is to shine and be in the 70's. We'll see...
COUNTING THE DAYS
Oh that it were with me
As with the flower;
Blooming on its own tree
For butterfly and bee
Its summer morns:
That I might bloom mine hour
A rose in spite of thorns.
Oh that my work were done
As birds' that soar
Rejoicing in the sun:
That when my time is run
And daylight too,
I so might rest once more
Cool with refreshing dew.
Christina Rosetti, A Summer Wish
Love would never be a promise of a rose garden unless it is showered with light of faith, water of sincerity and air of passion

Keep looking ON THE BRIGHT SIDE of things.
A little smile, a word of cheer,
A bit of love from someone near…

Hello again. Red roses are my favorite flower. I have been known to purchase some for myself too. :)
Loved the cookie recipe. I will have to copy it and give it a try. I am pretty sure our granddaughter, Jennifer will love them.
Have a great day. It's always such a pleasure to visit you.
