EAT YOUR VEGGIES DAY
Strategically created in the middle of National Fresh Fruit and Vegetables Month, this day is the perfect opportunity to re-introduce a healthy portion of vegetables into your diet. No doubt about it, Eat Your Vegetables Day was created to promote a more heallthy diet.......for life!
On this day, you are encouraged to eat vegetables for every meal, and for a snack. Any additonal vegetables at meal time today will honor the event, as well as make you a little healthier.
Eat your veggies everyday, but especially on June 17th!
Life expectancy would grow by leaps and bounds if green vegetables smelled as good as bacon.

NATIONAL APPLE STRUDEL DAY
So if you eat all your veggies on June 17 apparently you can also celebrate National Apple Strudel Day
Austria claims apple strudel as its national dish. But strudel is popular virtually everywhere! Here in the US, strudel-lovers united to have a day in June called National Apple Strudel Day. They'll tell you the secret to strudel success - winesap apples! Shhhh
Apple Crisp Strudel
4 golden delicious apples, peeled cored and chopped
1 cup quick-cooking oats
1 cup dried cranberries
1/2 cup packed brown sugar
1 teaspoon cinnamon
1 pinch nutmeg and allspice
1/4 cup unsalted butter, melted
3 tablespoons water
1/3 cup dry bread crumbs
2 tablespoons granulated sugar
6 sheets phyllo pastry
In large bowl, toss together apples, oats, cranberries, brown sugar, cinnamon, nutmeg and allspice. In small bowl, blend butter with water. In third bowl, combine bread crumbs with sugar. Arrange 1 sheet of phyllo on parchment paper-lined rimmed baking sheet with 1 long side facing you. Brush with some of the butter mixture; sprinkle with rounded tablespoonful of the crumb mixture.
Repeat with remaining phyllo, butter mixture and crumb mixture, stacking to make 6 layers. Spoon apple mixture in strip along bottom edge of pastry, leaving 1-inch border. Roll up into cylinder. Score diagonally just through top layer into 8 to 10 slices. Brush with any remaining butter.
Bake in center of 350 oven for 50 to 60 minutes (or 1 1/2 hours if frozen, covering with foil if top is browning too much) or until apples are tender and pastry is golden brown. Let cool slightly. Slice at score marks to serve.
I have not tried this recipe but it does sound delicious. What strudel I have comes from a bakery and that is not often, but I love it.

Vegetables are a must on a diet. I suggest carrot cake, zucchini bread, and pumpkin pie

One thing I'm really looking forward to this summer is some fresh veggies. Nothing tastes as good as tomatoes fresh off the vine. I love green beans when they come right out of the garden too. Years ago I had a garden and also canned or froze what came out of it. Those days are long gone, but thanks to local fruit and veggie stands I can still enjoy fresh produce. The growing season is short here in northern Ohio, but when we have it I'll be enjoying it to the fullest!
The bad news here this week was that my yahoo e-mail which I rarely use was hacked into. I've tried to correct the problem but if you receive a bogus email from me please just delete it. Someone was using my account to send out junk emails. I do apologize for this but certainly had no idea it was happening till I received one myself.
On the bright side I'm sharing my memory verse for the 15th with you today...
Make every effort to present yourself before God as a proven worker who does not need to be ashamed, teaching the message of truth accurately.

Another lovely post Ma. I love strudel and we were lucky enough that a few summers ago, we actually got to eat Apple Strudel in Austria! It was fabulous! Hope you have a wonderful weekend! xxoo
