Today is National Corn Cob Day and is our reminder that summer picnics are in full swing. The smell of fresh corn on the cob cooking makes our mouths water.
The history of corn dates back nearly 7,000
years ago in Mexico. Originally growing as a wild grass, corn eventually spread north into what is now the U. S. Native American’s planted and harvested corn making it plentiful across tribes. Today corn is found across North America.
Corn on the cob is known as pole corn, cornstalk, sweet pole, butter pop, sweet corn, or long raise depending on where you live. Despite the name variations, corn on the cob is best picked when the kernels are tender and in its milk stage serves up sweeter kernels.
Whle it might seem rude , proper dinner etiquette for eating corn says holding the cob in at each end with your fingers is appropriate. If you find yourself with butter dripping off your chin, don’t worry. Most people are probably having the same problem as you are, because everyone serves theirs with other seasonings, butter or oils.
How you prepare your corn on the cob depends on where you live. Boiling, steaming, roasting, and grilling are the most common ways to prepare it. Adding butter, oil and seasonings is all personal preference. In fact roasting corn on the cob and topping it with parmesan, chili pepper and cilantro seems to be the choice of many these days.
To celebrate today enjoy some corn on the cob smothered in butter. Yum!

Corn on the cob is one of my favorite summertime foods. I used to butter and salt it, but now I’ve cut out the salt and only use butter. It’s delicious ! We’ve gotten some really good corn at the grocery store a few times already this summer. It is fresh and just right for good eating. Here we cook it in a pot of boiling water, but you have to watch that you don’t over cook it.
I haven’t seen any good farmers markets here yet, so everything we get is at the store. I live in a housing development that is mostly out in the country and when you drive down the road you see field after field of corn growing. I have no idea if it is the kind to eat or the kind that gets used for multiple other things.
Corn is and always has been a popular vegetable for the kids. No matter how picky, most will eat corn. So I would serve it often at family dinners.
Corn is nutritious as well. It is gluten free and low in fat. with only about one gram of fat per ear. It contains small amounts of B vitamins. magnesium and potassium. It provides vitamin C too and lutein and zeaxanthin that support eye health. Corn has plenty of fiber both soluble and insoluble. The soluble fiber in corn breaks down and forms a gel in the intestine and can play a role of controlling cholesterol. Soluble corn fiber is used the manufacture of processed foods.
The covering of each kernel is insoluble. This is the undigestable kind that the body cannot break down and that passes through the body more or less intact which can add bulk to bowel movements and ease constipation. It also acts as a prebiotic, feed and supporting healthy gut bacteria.
Popcorn, made from the dried kernels of a type of corn called flint corn can be a healthy, filling , whole grain snack as long as it’s not filled with salt and grease. The healthier choice is air popped or microwave popcorn .
To make Healthy Microwave popcorn,
Put 1/4 cup of plain popcorn kernels in a paper bag and fold the end of the bag over.
Microwave on high until you hear two seconds between popping kernels.
Drizzle or mist with a small amount of olive oil and lightly toss with parmesan .

I love corn on the cobb - I like the white and yellow mix. It does have some sugar in it tho. I didn't know you could pop corn in a bag yourself without oil!!!!!!!!!!!!
