THOUGHT FOR TODAY
Verse 2: On the shore, dimly seen thro’ the mist of the deep,
Where the foe’s haughty host in dread silence reposes,
What is that which the breeze, o’er the towering steep.
As it fitfully blows, half conceals, half discloses?
Now it catches the gleam of the morning’s first beam,
In full glory reflected, now shines on the stream.
’Tis the star spangled banner. Oh! long may it wave,
O’er the land of the free and the home of the brave!
I will proudly fly my American flag today in honor of this holiday and sing the song too!
As usual I cooked for the weekend yesterday and on the the menu is:
Sheet Pan Balsamic Parmesan Chicken and Vegetables
Makes 4 servings
4 cups broccoli florets
3 cups cauliflower florets
1 cup sliced shallots
3 Tbsp. olive oil, divided
1/2 tsp ground pepper, divided
2 cloves garlic, minced
1 tsp, dried marjoram or oregano, which ever you have on hand,
4 bone in chicken thighs, skin removed if desired.
3 Tbsp. Balsamic vinegar
1/3 cup grated Parmesan Cheese
Preeheat oven to 450 degrees. Coat a rimmed baking sheet with cooking spray.
Combine broccoli, cauliflower, shallots, 2 Tbsp. Oil, and 1/4 tsp pepper in a bowl. Toss well to coat. Transfer to baking sheet.
Combine garlic, marjoram and remaining 1/4 tsp. pepper in a bowl. Coat both sides of the chicken with the garlic mixture and place on the baking sheet with vegetables. Roast 15 minutes then, toss the vegetables and drizzle the chicken with the vinegar. Sprinkle all with Parmesan and continue roasting for 10 more minutes until an instant read thermometer inserted in the thigh reads 165 degrees.
We are still warming up and were in the 60’s yesterday and today we will be in the 70’s.
I don’t have shallots so will use red onion in my dinner and you could also use boneless chicken thighs if you don’t have the bone in ones.
I love one Pan meals which means easier clean up for me.

Fly your flag today and sing the National Anthem today. I didn't know all 4 versus until I looked them up. I only knew the 1st one by heart.
You're not the only one having to look up all verses! Not sure if we even ever sang them while in Glee Club.
The flag mount on our eave is so tenuous and apt to give way, we've not flown the flag in several months. I do miss doing so, and now I'm wondering how much it would cost to have someone come out and install a pole.
