Today is National Peanut Butter Lover’s Day which is a day dedicated to a delicious snack food, peanut butter. Whether you prefer it smooth, chunky, or natural, peanut butter is the perfect addition to any snack. It goes with practically everything: crackers, pretzels, celery, carrots, apples, bananas. chocolate and much more.
The average person will eat 1,500 peanut butter and jelly sandwiches before they graduate from high school. Peanut butter has been popular since the early 1900’s, but no one knows who invented it . Today it is an $800 million industry dominated by household names such as Jif, Skippy, and Peter Pan.
It is an excellent source of protein and healthy fats and can reduce the risk of coronary heart disease.
For the healthiest choice look for brands that have no oil or sugar added.
Celebrate today and enjoy a delicious peanut butter snack ! Mmmm good and good for you!

It seems as though we just celebrated this day, but time flies by so fast, maybe we didn’t.
Peanut butter is a staple here in my pantry. I always have some on hand. I snack on it by dipping my apple slices in it or spreading it on a piece of celery. I make sandwiches with it. I also bake cookies with peanut butter in them. They are delicious. I’ll definitely be enjoying some peanut butter today !
It’s going to be a finish up Friday for me. Finishing all the chores that got started here this week. I have laundry to put away and dishes to put in the dishwasher and it’s going to be a warmer day so I may finsh up cleaning the porch. We’ll see how far I get. I do rest a lot and work a little. So I may not get it all done.
I will also be cooking something new today and on the menu is:
Lemon Garlic Pasta with Salmon
Makes 4 servings
8 oz. spaghetti or linguine pasta
5 Tbsp. Olive oil
5 cloves garlic, chopped
1/4 tsp crushed red pepper, optional
zest and juice of 1 lemon
1 1/2 cups flaked cooked salmon
3 Tbsp. fresh chopped parsley
2 Tbsp. whole wheat breadcrumbs, toasted, if desired.
Cook pasta according to package directions. Drain, reserving 1/2 cup cooking water.
Combine, oil, garlic, crushed red pepper if using, and lemon zest and juice in a skillet. Heat over medium high heat until sizzling. Add the reserved pasta water, the pasta, salmon and parsley. Cook stirring until the sauce coats the pasta. Serve topped with breadcrumbs if desired.
I will use canned salmon in mine and I don’t put breadcrumbs on my casseroles. Its an easy and tasty dinner to make.
March is also my birthday month and I will be celebrating all month long. Please join me. We’ll have a fun time. It is mile marker birthday for me and I’m going to do my best to make the most of it.

JIF peanut butter (extra crunchy) is a staple in our cupboards, as well. I just wish they'd make the jars a little wider. Sometimes when it gets low, it's hard to get my spoon all the way to the bottom without one or both dogs come running!
Lots of daily and monthly celebrations today. I LOVE peanut butter too - but I like the smooth kind with a piece of semi chocolate!
