Today is Dr. Seuss’s Birthday who was born in 1904, and went on to become the famous writer and cartoonist that we all love today.
He wrote and illustrated 44 children’s books containing fun rhymes, wacky plots and outrageous characters.
Some favorites include The Cat in the Hat, Green Eggs and Ham, Oh the Places You’ll Go, How the Grinch Stole Christmas and the Lorax.
They were so popular that he also had multiple TV specials and series, films and a Broadway musical made after them. Although he was an American writer and Cartoonist, his books were loved worldwide and were published in many different languages. Dr. Seuss won numerous awards for his work such as a Pulitzer Prize, two Academy Awards, two Emmy Awards and a Peabody Award!
Each year on this day, a special national event called Read Across American is held in his honor. It’s a day for children to celebrate their love of reading! You can celebrate today by participating in Read Across American with your kids. Read their favorite books together or celebrate fun activities like making Cat in the Hat hats or green eggs and ham! Have fun!

Dr Seusse books have always been a favorite here and we have enjoyed many breakfasts of green eggs and ham. All you have to do is add some green food coloring to your scrambled eggs. It doesn’t change the taste.
I will definitely be having some today! What a great way to celebrate my birthday month!
On Saturday’s I always cook for the weekend and today’s menu says we’re having
Sheet Pan Balsamic Parmesan Chicken and Vegetables
Makes 4 servings
4 cups broccoli florets
3 cups cauliflower florets
2 cups sliced shallots
3 Tbsp. olive oil, divided
1/2 tsp ground pepper, divided
2 cloves garlic, minced
1 tsp. dried marjoram
4 bone in Chicken thighs , skin removed if desired
3 Tbsp. balsamic vinegar
1/2 cup grated Parmesan cheese
Preheat oven to 450 degrees. Coat a rimmed baking sheet with cooking spray,
Combine broccoli, cauliflower, shallots and 2 Tbsp. oil, 1/4 tsp pepper in a bowl. Toss to coat. Transfer to baking sheet.
Coat both sides of chicken with garlic mixture. Place on baking sheet. Roast for 15 minutes. Toss the vegetables and drizle chicken with vinegar. Sprinkle all with Parmesan and continue roasting until the veggies are tender and an instant read thermometer inserted in the thickest part of the children registers 165 degree, about 10 more minutes.
I don’t have shallots so I’m using red onions in mine. You could also use boneless thighs if you want. This is good served with brown rice.
Today we are warmer than usual for us and we’ll be in the 50’s once again. Spring is still trying to push old winter away!

I don't recall ever having read Dr. Seuss, but love some of his quotes. My son and DIL took us for lunch in Birmingham today and I'm still stuffed ... no green eggs today, but yes. I've still some food coloring and St. Paddy's Day is just around the corner. Food coloring is great fun, no matter what one's age!
