Today is Random Acts of Kindness Day which is popular holiday. Individuals, groups and organizations nation wide encourage acts of kindness,
This movement inspires people every day. As a favorite celebration many people everywhere are enjoying doing acts of kindness. Not only do the acts of kindness bring joy to the receiver, but they spread positive reactions to the giver too.
Research found that the Random Acts of Kindness Foundation celebrates Random Acts of Kindness Week. The foundation is an internationally recognized non profit founded upon the powerful belief in kindness and is dedicated to providing resources and tools that encourage acts of kindness.
In New Zealand where this day originated, Random Acts of Kindness is celebrated September 1st. However, it is also recognized by some other days throughout the year. Never the less, doing random of acts of kindness is something that can be done every day of the year.
To celebrate today, Do an Act of Kindness for someone and hope they pass it on to others too.

Kindness doesn’t have to cost anything. We just need to share it with someone. Sure you can pay for someones’s coffee or dinner, but you can also leave a kind note for someone, no explanation needed. Share words of encouragement for someone in need. For example, offer to create a resume for someone seeking a new job.
Or we could mail out a thinking of you card to someone you’ve not talked to in a while. Or drop off a load of groceries to a food pantry.
There are so many things we can do that don’t cost a lot.
And don’t forget
to smile!
Once again I’m cooking something for the weekend. How time flies by.
On the menu this weekend is:
Garlic Ginger Turkey Tenderloins
Makes 4 servings
2 Tbsp. soy sauce.
1 1/2 tsp. ground ginger
6 cloves garlic minced
1/2 tsp pepper
1 pkg. 20 oz. turkey breast tenderloins
1 Tbsp. cornstarch
1cup chicken broth
In a small sauce pan mix the soy sauce, ginger, garlic and pepper.
Place turkey in a baking dish coated with cooking spray; drizzle with have the soy sauce mixture. Bake about 30 minutes uncovered until a thermometer reads 165 degrees.
Mean while add cornstarch to the remaining soy sauce mixture and stir until smooth. Stir in broth , bring to a boil; cook and stir until thickened. Cut turkey is slices and serve with sauce.
The original recipe called for 2 Tbsp. brown sugar, but I omitted that because of my sugar free diet. I’m going to use some honey instead. I think it will still taste delicious.
Honey is something sweet that I can still enjoy. I’m expecting company tomorrow as my two youngest sons and families are coming in again to finish up what needs to be sorted through and hopefully help me to pack my suitcases for what I’ll be taking with me on the move. It is getting very exciting.
