Today is also World Kindness Day which is a day that encourages individuals to overlook boundaries, race and religion. According to modern psychology, altruistic acts increases our own happiness in a profound way.
World Kindness Day was introduced in 1996 by the World Kindness Movement, it is observed in many countries including Canada, Japan, Australia, Nigeria and the United Arab Emirates.
To celebrate today, show a kindness to all you meet today. It all starts with a smile.
What you give really does come back to you, if you show others a kindness, they’ll be kind in return. Kindness does change hearts.
Thankfully, I do have a lot of kind loving people in my life. It doesn’t have to cost a cent to be kind, you can always give someone a smile for free.
They show you are a kind person, and would like to help them however you can. Many like to pay a kindness forward and give kindness to others too, I know some that have received a free cup of coffee thanks to the person behind them and pay it forward for paying for the person behind them too.
Some even receive free meals and do the same for others. If you get a free meal, you can afford to buy a meal for someone else.
I always try to do a kindness everyday. I try to send smiles to everyone I know and show how much I appreciate them
Today is my day to cook and on the menu is:
French Onion Soup
5 Tbsp olive oil, divided
1 Tbsp. butter
8 cups thinly sliced onions
3 garlic cloves, minced
1/2 cup port wine
2 cartons, 32 oz. each beef broth
1/2 tsp pepper
24 slices French bread baguette, 1/2 inch thick
2 large garlic cloves, peeled and halved
3/4 cup shredded Swiss cheese
In a Dutch oven, heat 2 Tbsp. oil and butter over medium heat. Add onions, cook and stir until softened. Reduce heat to medium low, cook stirring occasionally until deep golden brown,
Add minced garlic and cook 2 minutes longer.
Stir in wine. Bring to a boil, cook until liquid is reduced by half. Add broth and pepper; return to a boil. Reduce heat. Simmer, covered stirring occasionally for 1 hour.
Meanwhile preheat oven to 400 degrees. Place baguette slices on a baking sheet. Brush both sides with remaining 3 Tbsp. oil. Bake until toasted on each side, rub toasts with halved garlic.
To serve, place boiler safe bowels on baking sheet, place 2 toasts in each. Ladle soup, top with cheese. Broil 4 inch from heat until cheese is melted.
If you do not have a baguette you can use croutons, just toast them in the oven and scatter on top the soup with or without cheese I don’t have shredded swiss cheese, so I’m going to cut a Swiss cheese slice in half and place it on top instead.
This soup sounds delicious and as it’s been cold here, I am going to enjoy it very much.
