Today is All Hallows Day, which is also known as All Saints Day. All Saints honors all the saints in Christain History. Dedicating a specific day to an individual saints, like Saint Nicholas , and martyrs is an ancient Christian tradition and All Saints Day can be traced back 886 AD.
Celebratons take place all across the world. In Spain, the play Don Juan Tenorolo is performed each year. In many European countries , people bring flowers to the graves of loved ones. This day coincides with Dia de los Muertos, the Day of the Dead.
All Hallows Eve, All Saints Day and All Souls Day are collectively known has Hallowtide.
To celebrate today, take a moment to remember all those who have come before you to commemorate the occasion.
I believe that there are Saints and Angels all around us. They are watching over us and help us to make the right decisions.
Decorating the graves of our loved ones is often done on Memorial Day, but today is also a good day to do so.
I think my grandmother would be one of those Saints. She was a truly good person and believed in God. She did what she could with the means she had, to help others. I never heard her say a bod word about anybody. She believed in the good of others.
We should all aspire to be Saints. We were taught to always love others as ourselves and forgive their faults.
November begins my 30 days of Thankfullness and today I’m especially thankful for family. They make me what I am and I love them all very much.
On Wednesday I make up a shopping list from my menu next week and Here is the menu
Monday - Chicken and White Bean Soup
Wednesday - Slow Cooker Arroz con Pollo (Chicken and Rice)
Friday - Salmon Rice Bowl
Weekend - Turkey Salisbury Steaks
On the menu for today is :
Creamy Chicken, Brussels Sprouts and Mushrooms One Pot Pasta
Makes 5 servings
8 oz. linguine or spaghetti, I used the Barilla's Protein Rotiniv
2 lb. boneless skinless, chicken thighs
4 cups sliced mushrooms,
2 cups sliced Brussels sprouts
1 onion, chopped
4 cloves garlic, thinly sliced
2 cups softened cream cheese
1 1/8 tsp. dried thyme
3/4 tsp. dried rosemary
4 cups water
2 tsp. dried chopped chives
Combine pasta, chicken, mushrooms, Brussels sprouts, onion garlic, Cream cheese, thyme, and rosemary in a large pot. Stir in water and bring to boil over high heat. Boil, stirring frequently until pasta is cooked and water has almost evaporated. About 12 minutes.
The original recipe called for Boursin cheese which I didn’t have so I substituted the cream cheese
Remove from heat and let stand, stirring occasionally for 5 minutes. Serve sprinkled with chives.
One pot meals make for easier clean up for sure.
There is be a few snow flurries or showers today, so I’ll be bundling up when I go out. Our high will only be in the low 40’s today. There was snow on the ground when I woke up this morning, I guess winter is coming early this year.
On the bright side that is better than the 30’s we had last night.
