Today is Go for a Ride Day which is something many will be doing over this holiday weekend. We don’t often take enough time to sit back and relax. This holiday reminds us to be in the moment and enjoy life's aimless journeys.
To celebrate today, gas up your car and explore a new part of town, jump on the train and use the journey as a chance to destress, or simply enjoy a casual bike ride with friends and family. Wherever your journey takes you, make sure to sit back and enjoy the ride!

I will be going for a ride on Saturday, when we travel to DDIL#1’s house for our family Thanksgiving celebration. I’ll probably be riding with DS#5 and his family. He lives close by and can pick me up on their way. DD has given me plenty of rides too, but it would be out of the way for them to come and get me. They’d have to double back to be on the way.
I’m very thankful to have a ride with either of them as I don’t drive very far at all these days. I can do my shopping and go to doctor appointments because they are not far away.
Today , I’m going for my lab work for the appointment next week with my kidney specialist. I’m thankful it is before the Thanksgiving feast, where I no doubt will be eating things I shouldn’t. Every one is a good cooks, but they are not going to be dieting there.
I’ll be packing up the mac salad in my cooler to take along with me tomorrow. It needs to stay cold.
It’s still in the 40’s today, by Saturday it's to be close to 50 degrees , but mostly in the 40’s . We’re to have sunshine that will warm it up. I won’t be cooking for the weekend as we’ll be having our annual feast there. Everyone is bringing a dish to share. My DIL will supply turkey and roast beef sandwiches, We will be bringing the rest. There will be 5 families altogether, so it should be loads of fun! Each one of us is in a different part of Ohio. They live the farthest south. We’ll be missing the two families out of state, but the ones of us there will be thinking of them and missing them too.
On the menu for today is:
Chicken and Vegetable Penne with Parsley-Walnut Pesto
Makes 4 servings
3/4 cup chopped walnuts
1 cup lightly packed parsley leaves
2 cloves, garlic peeled and crushed
1/8 tsp ground pepper
2 Tbsp. olive oil
1/3 cup grated Parmesan cheese
1 1/2 cups shredded or sliced cooked skinless chicken breast
8 oz greenbeans, trimmed and halved crosswise
2 cups cauliflower florets.
Bring a pot of water to a boil.
Place walnuts in a small bowl and microwave on High until fragrant and lightly toasted or toast the walnuts in a skillet over medium low heat, stirring constantly until fragrant, about 3 minutes. Transfer to a plate and let cool. Set 1/4 cup aside for topping
Combine the remaining 1/2 cup walnuts, parsley, garlic and pepper in a food processor. Process until nuts are ground. With the motor funning, add oil through the feeding tube. Add Parmesan and pulse until mixed in. Scrape the pesto into a large bowl. Add chicken. Mean while cook pasta in boiling water for 4 minutes. Add green beans and cauliflower. Cover and cook until the pasta is al dente and the vegetables are tender. Before draining scoop out 3/4 cup of the cooking water and stir it into the pesto chicken mixture to warm it slightly. Drain pasta and vegetables and the pesto to the chicken mixture. Toss to coat well. Divide among 4 pasta bowls and top each serving with 1 Tbsp. of the reserved walnuts.
This is a yummy dish and easy to make.
The rain is supposed to be stopping. It traveled through here on Monday and went east of us. We’ll still be in the 40’s most of the weekend. It will be a good weather to take a ride in. Today, My ride is going to take me to have lab work done. For Saturday, I just hope the traffic isn’t too bad and we get there safely.

I know you will have a great time with your family.. Happy Thanksgiving from down here. There was a time this time of the year folks from here would drive to the mountains to see the color. It was always a beautiful drive.
