Today is a Happy Birthday to our Ray of Sunshine, who is not so little today. He’s a full grown man and graduated from high school this year. He and his brother are known as my Sunshine boys, who always make me smile!

Today is also Citizenship day also known as Constitution Day which marks the Anniversary of the ratification of the U.S. Constitution on Septenber 17th, 1786, It also recognizes all who have become a U.S. citizen, whether by coming of age or by naturalization .
The origin of this holiday dates back to 1940 when I’m an American Day was celebrated on the third Sunday in May. In 1952 congress moved the date to September 17 and renamed it Citizenship Day. In 2004 the official name changed to Constitution Day and Citizenship Day.
Due to an ammendment made in 2004 to a spending bill, all publicly funded educational institutions and all federal agencies must provide educational Programing on the history of our American Constitution on this day.
To celebrate today, take a moment to reflect on the Constitution and what is means to be a U.S. Citizen.

This birthday is another long distance celebration. I did get to visit with him and give him a big birthday hug when he and his brother and Dad came to visit last weekend. They had come in to see the Ohio State and Browns football games. I got to go out to dinner with them and visit for a short while. I’m still sending out a card to him filled with hugs and love for his actual birthday !
It’s a cool day here with chances of rain. It’s my day of rest and that’s what I’m going to do. Another chance for a good long Sunday nap is probable.
I’m sharing the recipe for what I cooked for the weekend today, but I actually didn’t fix it. I’m going to save the recipe I fixed instead the pork chops I should have done on Wednesday, but then I ran out of time and had a chicken salad sandwich instead.
On my menu for weekend was:
Homemade Apple Cider Beef Stew
Makes 8 servings
2 lbs beef stew meat cut into 1 inch cubes
2 Tbsp. oil
3 cups apple cider
1, 14.5 oz can of low sodium beef broth
2 Tbsp. cider vinegar
1/4 tsp. dried thyme
1/4 tsp. pepper
3 medium potatoes, peeled and cubed
4 carrots, cut into 3/4 inch pieces
3 celery ribs, cut into 3/4 inch pieces
2 medium onions, cut into wedges
1/4 cup flour
1/4 cup water
Fresh thyme sprigs, optional
In a Dutch oven, brown beef on all sides in oil over medium high heat.
Add the cider, broth, vinegar, salt thyme, and pepper ; bring to a boil. Reduce heat, covered and simmer for 1 1/4 hours.
Add the potatoes, carrots and onions and return to a boil. Reduce the heat; cover and simmer for 35 minutes until beef and vegetables are tender.
Combine four and water until smooth; stir into stew. Bring to a boil and cook and stir for 2 minute or until thickened, If desired serve with fresh thyme.
This is good meal for a cold day.
I’m proud to say I’m an U.S. citizen by birth. I was born in the U.S. state of Ohio and have lived here all my life. I’m proud of our history and all that went into making our Constitution great. It has been amended, but is still as true for us today as it was then.
It’s so important to rest up for a busy week ahead. Remember to relax for a while.

Meanwhile, if I don't stop ogling that birthday cake, I'll be growing sideways. LOL.
