It would be very meaningful to help someone else become literate. Being literate means having the ability to produce, interpret and understand language appropriately. Learning how to read and write was something I was taught from a young age at school. Sad to think there are so many people do not know how to do that. Can you image not being able to read and going shopping. You wouldn’t know what to buy or how much it costs.
There are some right around us that never learned correctly to read and have a very low level of reading. Organizations will take volunteers to read to kids and help them learn to read. I love to read and do a lot of it. I helped my children learn to read by many hours of sounding out words so eventually they learned to spell the words and read what they said. Some of them love to read as much as I do, One thing is for sure, they can tell what they are buying and how much it costs. There are some jobs others can’t do if they don’t know how to read. The better you read, the more you know. I learned more from books than I ever did from a teacher. There are books about anything you want to know. You can’t even cook if you don’t know how to read the directions.
People used to sign their name with an X because they didn’t know how to write their name. My maiden name was Abahazi, and it took me a while to learn how to write it, but I did after hours of practicing with my Mom. Dad never helped with homework, but he was a smart man. He taught himself a lot from reading everything he could. He didn’t go to college but made a decent salary. He worked at everything from the steel mills and eventually wound up selling real estate. For years he remodeled homes and sold them for more than what he bought them for. I lived in 21 homes by the time I turned 21 because we lived in the houses he worked on until he sold them. So when I got married I was ready to settle down and stay in one place for awhile. We did move a few times because of our growing family. I have always lived in the same town just in a lot of different houses. Now that I’m retired and live myself, I moved to a much smaller house and I love it here. I have everything I need and it is a safe and secure place. Everyone that lives here has to have a background check before they can move in.
It’s my day to cook and on the menu today is:
Beer Battered Fish with Tomato and Avocado Salsa
Makes : 2 servings, tacos, and about 3/4 cups salsa each
Tomato and Avocado Salsa:
1 lg. tomato diced
1/2 cup diced red onion
1/2 jalapeño , minced
2 to 3 Tbsp.lime juice
1/3 tsp.freshly ground pepper
1/2 Avocado, diced
1/2 cup chapped cilantro
Pinch of Cayenne, if desired.
Fish Tacos:
3 Tbsp. flour
1/8 tsp ground cumin
1/3 cup beer
8 oz. tilapia fillet, cut crosswise into 1 inch wide strips
2 Tsp Canola oil
4 corn tortillas warmed
To prepara salsa: Combine tomato, onion, jalopeno, lime juice to taste and pepper in a medium bowl. Stir in avocado and cilantro.
To prepare tacos: Combine flour, cumin and cayenne in a medium bowl. Whisk in beer to create a batter.
Coat tilapia pieces in the batter . Heat oil in a large nonstick skillet over medium high heat. Letting excess batter drip back into the bowl, add the fish to the pan and cook until crispy and golden. Serve the fish with tortillas and the salsa.
Tip: to warm the tortillas, wrap in barely damp paper towels and microwave on high for 30 to 45 seconds or wrap in foil and bake until steaming, 5 to 10 minutes.
Of course I omitted the jalopeno and cayenne pepper from mine. I like my food mild.
I cheated and bought beer battered fish to use and also some store bought salsa. Still it will all be very good.
We got some badly needed relief from the heat and today we’re to be in the low 70’s, but sunny. The pictures shown today are some of my grandchildren going back to school.

I don't remember learning to read -- only that I loved it. Then AND now!
These back-to-school photos are wonderful. I love the outfit your little granddaughter is wearing in the first. Even her shoes match!
