Today is White Chocolate Day which celebrates the confection known as white chocolate, it does not officially contain any chocolate at all. In 2005, ten years after chocolate manufactures filed the first definition of chocolate , it was accepted into the white chocolate family. A chocolate must contain at least 20 percent cocoa butter. 14 percent total milk solids, 3.5 percent milk fat, and less 63 percent of sugar. White chocolate was invented by Nestle company in Switzerland. The first white chocolate bar debuted in 1930.
Despite its long history, for many years the confection known as white chocolate was never officially a chocolate at all. It doesn’t contain cocoa solids, one of the main ingredients in traditional chocolate. In 2004 after chocolate manufacturers filled the definition of chocolate manufacuturerfiled the fist petition, the FDA finally relaxed its definition ofchocolatend accepted white chocolate into the family.
To celebrate today, pick up a scrumptious white chocolate truffle or a package of white chocolate covered pretzels. Yum!

I like to use white chocolate chips. One of my favorite cookies is white chocolate chips with macadamia nuts. But most of the time I use regular chocolate chips to make cookies with.
I have had chocolate covered pretzels many times and like them either way. Dark chocolate is my favorite chocolate and I try to get it when I can. But chocolate is always good any way you have it.
On the menu for today is:
Lemon Garlic Pasta with Salmon
makes 4 servings
8 oz. whole wheat pasta, I used spaghetti
5 Tbsp olive oil
5 cloves garlic, chopped
1/4 tsp crushed red pepper
Zest and juice of 1 lemon
1/2 cup flaked cooked salmon
3 Tbsp. chopped fresh parsley
2 Tbsp. whole wheat bread crumbs, toasted
Cook pasta according to package directions. Drain, reserving 1/2 cup cooking water
Combine oil, garlic, crushed red pepper, lemon zest and juice in a large skillet. Heat over medium high heat until sizzling. Add the reserved water, the pasta, salmon and parsley. Cook stirring, until sauce coats the pasta, about 2 minutes. Served topped with breadcrumbs.
I didn’t have any leftover cooked salmon to use, so I use the kind out of a can. I also didn’t have any fresh parsley, so I used dried,
This is delicious and quick and easy to make.
