Today is Workaholics Day which honors those people who are addicted to their work. While dedication is certainly an admirable trait, a heathy work life balance is also important.
For all the workaholics of world, today is the day to step back and take it easy. If you fall into this category, take an afternoon nap, read a book, or spend a few hours watching videos on You Tube. You’ll have plenty of time to finish your work tomorrow.
For everyone else, today is the perfect opportunity to celebrate the workaholics in your life and to recognize all they have accomplished.
To celebrate today, arrive at the office earlier than usual and tackle a project you’ve been avoiding. Happy Workaholics Day!

I no longer work at all. I’m retired. But when I did, I found out that I had to take a break now and then, to keep on doing my best.
All work and no play is not good for your heath. Life becomes too stressful. I remember when we first started camping how good it was to get away from work where the telephone no longer rang. That was before cellphones, and it was nice to get away to take a break form work. I’d breathe a sigh of relief and thoroughly enjoy the weekend away.
We had a pretty good 4th of July weekend and now the work week is about to begin again. For me that means it’s time to make a new menu for next week, so that I can do my grocery shopping. On the menu for next week will be:
Monday - Creamy Pesto Chicken Salad with Greens
Wednesday - Spinach and Egg Scramble with Raspberries
Friday - Easy Shrimp Scampi with Zucchini Noodles
Weekend - Air Fryer Fried Chicken
On the menu for today is;
Sheet Pan Chicken Fajita Bowls
Makes 4 servings
2 tsp chili powder
2 tsp. ground cumin
1/2 tsp, garlic powder
1/2 tsp paprika
3/4 tsp. ground pepper
2 Tbsp olive oil, divided
1 1/4 lbs. Chcken tenders
1 onion, slice thin
1 green bell pepper, sliced
4 cups chopped and stemmed spinach or kale
1 15 oz can of black beans , rinsed
1/4 cup Greek yogurt
1 Tbsp. Lime juice
2 tsp water
Place a large rimmed baking sheet in oven, preheat to 425 degrees.
Combine chili powder, cumin, garlic powder, paprika and ground pepper in a large bowl. Transfer 1 tsp of the spice mixture to a medium bowl and set aside. Whisk 1 Tbsp. oil into the remaining spice mixture in the large bowl. Add chicken, onion and green bell pepper; toss to coat.
Remove pan from oven, coat with cooking spray. Spread chicken mixture in an even layer. Roast for 15 minutes.
Meanwhile combine the spinach and black beans with the remaining 1 Tbsp olive oil in a large bowl and toss to coat.
Remove the pan from the oven . Stir in chicken and vegetables. Spread spinach and beans evenly over the top. Roast until chicken is cooked through and the vegetables are tender. About 7 minutes more.
Meanwhile add yogurt, lime juice and water reserved spice mixture; stir to combine.
Divide the chicken and vegetables amoung 4 bowls. Drizzle with the yogurt dressing and serve
You serve this in a bowl like a salad and don’t put in a tortilla.
It’s supposed to be a hot day today so I thought it would be best to order the groceries and then go pick them up. We’ll be close to 90 degrees and it’s sunny! Take care in the heat and drink plenty of water.

This would have been my day, but happily it's not anymore. I'm so grateful for these wonderful retirement years. Have a great day!
I'm so happy not to have inherited my father's workaholic ways (lol). Don't get me wrong; I always gave more than what was expected -- but at day's end was happy to leave matters at the office.
Your weekly menu certainly sounds refreshing. I may ask Tom to cut up a rotisserie chicken this afternoon and make up some different containers of chicken salad. Your pesto sounds good, and I'm thinking bleu cheese or curry. (That better be a big chicken, lol)
