Today is National Raspberry Cake Day which celebrates raspberries, an important fruit crop, widely grown in temperate regions of the World. Traditionally, they are a mid summer crop, but can now be obtained year round. Raspberries need ample sun and water for optimal development.
Raspberry pie is composed of raspberry filling, or topping usually in the form of either raspberry jam, or actual raspberries themselves or some combination there of. Raspberries can be soaked in water prior to baking to prevent burning.
The raspberry is the edible fruit of multitude of plant species in the Rubus of the rose family, most of which in the subgenus idaebatus, the same also applies to these plants themselves. They are perennial with woody stems.
To celebrate today have some raspberry cake! Enjoy this mid summer treat !

Like any berry, raspberries are very good to eat and good for you too! I have some on hand and will probably have mine on some short cake like strawberry shortcake. They are a delicious summer dessert !
Wednesdays are always a day to cook something new for dinner and on the menu today is:
Mediterranean Pasta Salad
2 Tbsp plain hummus
1 Tbsp. water
2 tsp. olive oil
1/2 cup chopped red pepper
1/2 cup quartered artichoke hearts, drained and cut in half.
1cup lightly packed baby spinach
4 pitted Kamata olives,roughly chopped
1 3oz, can tuna in water, drained
1/2 cup cooked farfalle pasta
1 Tbsp crumbled feta cheese
1 Tbsp. toasted chopped walnuts
1 Tbsp. lemon juice from 1/4 lemon.
Whisk hummus and water in a small bowl. Set aside
Heat oil in a nonstick skillet over medium high heat. Add bell pepper, cook for 1 minute. Add artichoke hearts, spinach, and olives. Gently stir in tuna trying not to break up large pieces, cook until tuna is warmed, about 1 minute more, stir in pasta. Remove from heat and toss with the hummus sauce. Top with feta and walnuts and drizzle with lemon juice if desired.
This salad is a new one to me, I’ve never used hummus in my cooking before, and I don’t keep it on hand so I substituted mayonnaise instead. You could aldo use guacamole or bean dip instead. I didn’t have feta cheese so substituted grated Parmesan cheese instead. I try to use what I have on hand rather than buying something new.

Friday - Air Fryer Tilapia
Weekend - Roasted Chicken Tenders with Peppers and Onions
It’s to be a partly cloudy day but no rain is expected so it will be a great day to get out and shop. Tomorrow the rain will once again return.

National Raspberry Cake Day - well I can eat them, but they are not my favorite - love the cake idea. Can't wait until fall either - too hot!!!!!!!!!!!!
I love raspberries! We buy our at Sam's Club. there are fresh and delightful.
