Today is National Avocado Day which celebrates a healthy and delicious food item, Avocados have blossomed in popularity in recent years,
The avocado is considered a berry. Given the fleshy pulp; and seed of the avocado, the green food hits the botanical critice of a berry. The history of the avocado consumptiontion dishes all the way back to 10,000 years ago. However it is believed that humans did not begin cultivating avocados until around 500 years ago in Mexico, Now they are enjoyed all around the world.
To celebrate today, whip up a batch of quacammolie or enjoy avocado salad, Enjoy!

My favorite way to use avocados is in quacamolie. I get individual packs of it at the store. They are handy way for me to snack on corn tostados . The first time I had it, it was very hot, I like mine mild. I don’t put the peppers in it.
Monday is my day to cook up something new for dinner and on the menu is:
Egg - Vegetable Salad Wraps
Makes 6 servings
6 hard cooked eggs, chopped
1/2 cup chopped cucumber
1/2 cup chopped yellow sumer squash or zucchini
1 coo shredded carrot
2 Tbsp chopped red onion
1 cup mayonaise
2 Tbsp, Dijon mustard
1 Tbsp. milk
1 tsp.dried tarragin or basil, crushed
6 leaves lettuce
6, 7 inch whole wheat tortillas
2 tomatoes, Thinly sliced
Combine eggs, cucumber, squash, carrot and red onion in a bowl, For dressing stir together mayonaise, mustard, tarragon and paprika in a small bowl. Pour the dressing over egg mixture, toss gently to coat.
To fill each sandwich, place a lettuce leaf on a tortilla. Place 3 or 4 tomato slices on the lettuce , slightly off center, Spoon about 1/2 cup of egg mixture on top of tomato slices. Roll up tortilla, if necessary
secure with tooth picks. Cut the tortilla rolls in half crosswise to serve.
This is a new sandwich recipe for me, but it does sound good for a summer meal. It’s to be close to 80 degrees today so it will be a cool refreshing dinner to have.

When I think about avocados, I think about guacamole. It is a delicious snack!
Fallbrook, CA considers itself to be the Avocado Capital of the world. We live up the freeway about 20 miles. Avocados are so delicious, without any spice, for sure. I don't like the spice either.
I am sure that avocados are good for you. Must be why I've never liked them! No, not even in guacamole. I'm weird I know. I like cheese dip with my chips or salsa!
I do love me some guacamole, but keep forgetting to buy those packs. We've already so much food in the fridge waiting to be consumed, that's probably for the best ... but I'm writing myself a note now to add it to next week's cart.
