Today is also Pecan Pie Day which celebrates a pie with a smooth filling and a crunchy top. Traditional recipes for pecan pies call for ingredients like pecans, butter, eggs and brown sugar, but there are many variations. Some people even choose to add spcecial ingreadients like chocolate or bourbon.
Most Americans consider pecan pie to be a Southern specialty, but this type of pie is actually French in origin. French immigrants living in New Orleans baked the first American pecan pies. Many years later, the Karo company popularized the dessert with recipes that called for the company’s corn syrup.
Even though it’s not Thanksgiving, today is a great day to eat a slice or two. To celebrate today, make your own or order one from your local bakery. Serve with whip cream and enjoy!

Even though my daughter lives close by, I’ll probably not see her today. So an anniversary card will go out in the mail soon filled with anniversary love and best wishes. I’m sorry for the confusion when I mistakenly mentioned their anniversary the other day, it is officially today.
I rarely make my own pecan pie, but buy them at the store in the freezer section. All I have to do is let it thaw out. I am not really allowed to have pie, but every now and then a small piece is needed.
Pecans are very good for you and they are my favorite nut to eat. I recently got a can of mixed nuts and it was filled with pecans which is unusual. I’ve never seen so many in a can of mixed nuts before. They are unsalted and I got them at Sam’s club.
I’ll probably eat a few of them to celebrate today!
Today is my shopping day which means I’m also making a new menu to do my shopping from.
On the menu for next week is:
Monday - Meal Prep Turkey Cobb Salad
Wednesday - Mediterranean Pasta Salad
Friday - Spinach and Egg Tacos
Weekend -One Pan Chicken Parmesan Pasta
On the menu for today is:
Spinach and Egg Scramble with Raspberries
Makes 1 serving
1 tsp. oil
1 1/2 cups baby spinach
2 eggs, lightly beaten
1 slice whole grain bread, toasted
1/2 cup fresh raspberries
Heat oil in a small nonstick skillet over medium high heat. Add spinach and cook until wilted, stirring often. Transfer spinach to a plate. Place pan over medium heat and add eggs. Cook, stirring once or twice to ensure even cooking, until just set, about 2 minutes. Stir in the spinach and some pepper. Serve the scramble with toast and raspberries.
This will make a good breakfast for dinner for me.
It’s supposed to rain today, but it will be scattered, so I’m hoping to get out and back home while it’s dry out.

Pecan pie used to be my favorite sweet, but not so much anymore. Probably on account my mother's not around to make it. She used both light and dark Karo syrup + 1c shredded coconut, but can't recall what else.
Nuts are so tasty!
