Today is also National Zucchini Day which celebrates this versatile green vegetable and all the delicious dishes we can make with it.
The common zucchini is a close relative of the cucumber and melon. It is a type of squash that comes from Italy.The name zucchini comes from the word zucchino which means small squash in Italian. The largest zucchini on record was 69.5 inches long and weighed 65 pounds. It probably wouldn’t tatse very good though. For the best flavor , always choose a small or medium sized zucchini.
To celebrate today, plan a dinner menu full of this healthy vegetable. Grill it, bake it into bread, or add to a salad ! Yum!

I won’t be seeing this couple today in order to celebrate with them, but I put a card in the mail with anniversary best wishes and love.They are always very busy with their own family. Thamkfully they do live close by and I get to see them often.
Zucchini is one of my favorite things to add to recipes, I try to keep some frozen in the refrigerator. I like the small ones, they are tastier. I do buy fresh ones at the farmer’s markets in the summer and they always taste better too.
I am cooking for the weekend today and on the menu is:
Pork Paprikash with Cauliflower Rice
Makes 4 servings
1 lb. pork tenderloin
6 cups chopped cauliflower
2 Tbsp. olive oil, divided
1/4 onion cut into thin wedges
1 1/2 Tbsp paprika plus more for garnish
1/2 tsp ground pepper
1 14.5 oz no salt, diced tomatoes with basil, garlic, and oregano, undrained
1 cup chicken broth
1/4 cup mild banana peppers, finely chopped
2 Tbsp flour
8 tsp. sour cream, optional
Trim fat from meat, cut meat into bite sized pieces, set aside.
Place cauliflower in a food processor. Cover and process several pulses until cauliflower is evenly chopped into rice size pieces.
Heat 1 Tbsp. oil in a large non stick skillet over medium high heat. Add cauliflower and cook about 10 minutes or until golden brown flecks appear, stirring occasionally.
Meanwhile heat the remaining Tbsp oil, add meat and onion. Cook about 3 minutes or until starting to brown. sprinkle with 1 1/2 Tbsp paprika and ground pepper. Cook and stir one minute more.
Add tomatoes, broth, and banana peppers. Bring to a boil, reduce heat to medium low. Cook covered 5 minutes. Increase heat to medium high. Cook uncovered 6 minutes until slightly thickened, stirring frequently. Stir in 1/3 cup sour cream and flour in a small bowl, stir into meat mixture. Cook until thickened and bubbly.
Serve meat mixture over cauliflower rice. If desired top each serving with 2 tsp. sour cream and a sprinkle of paprika.
The cauliflower rice makes it healthier than using regular rice. I’ve made chicken paprikas before but this is the first time making it with pork. We’ll see if I like it just as much. I bought cauliflower rice in the store so I didn’t have to put mine in a food processor.
Today we are supposed to have some more rain in the afternoon. Thankfully if won’t be a complete wash out. I don’t have any reason to go out so I’ll probably just stay in and get some things done that I didn’t finish during the week.

It's been years since I've eaten zucchini, but picked one up at the grocery b/c they were out of summer squash. Two stores! I wonder what that's all about?
Come to think of it, there's also a package of cauli rice growing old in the freezer. It's okay, but I prefer to jazz it up some with 000 Flavor drops (no cal, no carb). Happy Saturday!
