Today is also National Grilled Cheese Sandwich Day which one of the most popular comfort foods in the world.
It requires only three ingredients: bread, cheese and butter.
The ancient Romans were the first civilization to make cooked bread and cheese sandwiches, but many cultures invented their own take on this ancient dish. In France, people enjoy Croque Monsieur, a grilled ham and cheese sandwich, while in Switzerland it is customary to melt the cheese and toast the bread separately before combining them.
The classic American grilled cheese sandwich emerged in the 1920’s when inexpensive cheese and affordable sliced bread became available. It is now a staple in cafes, diners and school cafeterias across the country.
To celebrate today enjoy a grilled cheese sandwich made your favorite way and served with a side of tomato soup!

This granddaughter is called # 1 because she is my first grandchild. I was fortunate to have been there where with her when she was born. But it has been several years since I’ve seen her. I’m only able to keep up with her because she is on FB, which is where I’ll be giving her birthday wishes today. She is a nurse and I’m proud of all she does.
It’s also my Mom’s birthday today so I always connect the two in to one celebration. Mom died serveral years ago so it is a heavenly birthday for her.
I do love grilled cheese sandwiches and thankfully can still enjoy them. I love having tomato soup with them too, but usually just have a sandwich by itself. That’s enough for me to eat.
As usual I’ve made up a new menu for next week to do my grocery shopping from today.
Monday - Smash Burgers
Wednesday - Baked Ziti
Friday - Sheet Pan Shrimp and Asparagus
Weekend - Cream of Mushroom Pork Chops
On the menu for today is:
Baked Cavatelli Casserole
Makes 8 servings
8 oz. multi grain penne pasta
12 oz uncooked ground Italian sausage
1 cup chopped zucchini
1 cup button mushrooms
1 sweet red pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1 can, 14.5 oz., no salt diced tomatoes, undrained
1 8 oz can no salt added tomato sauce
1/4 tsp. dried basil, crushed
1 tsp. dried oregano, crushed
1/4 tsp black pepper
1 cup shredded Italian blend cheese
Cook pasta according to package directions. Meanwhile in a large skillet cook sausage, zucchini, sweet pepper, onion and garlic over medium hea until sausage is browned and veggies are just tender, stirring to break up sausage as it cooks. Drain off any fat and discard. Add tomatoes, tomato sauce, dried basil and oregano, and black pepper. Bring to a boil; reduce heat. Simmer, covered for 10 minutes, stirring occassionally.
Stir together pasta and sausage mixture. Spoon mixture in a baking dish.
Bake covered 40 minutes or until heated through. Uncover, Sprinkle with cheese. Bake 5 minutes more until cheese melts.
For a less spicy dish use regular ground sausage. Easy to make and healthy too.

My mother's go-to meal was a grilled cheese; I can still picture her standing in the kitchen making it up in a cast-iron skillet. Just can't remember if she used Velveeta (a staple) or another kind. Have you noticed there in Ohio, that more restaurants are putting a gourmet version of grilled cheese on their menus?
