Today is Pretzel Day which celebrates the traditional soft pretzels that are popular a sporting events, carnivals and festivals.
Hard pretzels are a fairly new invention compared to soft pretzels.According to legend in the 1600’s a Pennysyvania baker forgot a batch of pretzels in the oven. The over baked treats were dark and hard, but the baker sampled one anyway. He was pleasantly surprised by their crunchy deliciousness. Hard pretzels are now one of the most popular snack foods.
Monks created the first pretzels from scraps of leftover dough. The unique knot shape represented the Holy Trinity, but the significance has evolved over the course of history. During the 17th century, pretzels symbolized the bond of marriage. This is where the phrase tying the knot originated.
To celebrate today, pick up a bag of your favorite type of pretzels to enjoy today.

I do enjoy pretzels and if I make my own without the salt I can still enjoy a soft pretzel. I haven’t found any salt free pretzels in a bag.
It’s my day to make up a new menu to do my shopping from for next week.
On the menu is:
Monday - Homemade Chicken Tenders with Everything Bagel Seasoning over Salad
Wednesday -Mozzerella, Basil and Zucchini Frittata
Friday - Seafood Salad
Weekend - Creamy Chicken, Mushroom,and Spinach Casserole
I only cook every other day and eat leftovers in between.
On the menu for today is:
Chicken Enchilada Skillet Casserole
Makes 6 servings
2 Tbsp. olive oil
1 cup fresh or frozen corn kernels
1 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup diced onion
15 oz package baby spinach
2 1/2 cups shredded cooked chicken breast
1 8 oz pouch enchilada sauce
1 1/4 cups fresh salsa
8 1/2, 6 inch corn tortillas, cut into 1 inch thick strips
1/2 cup shredded Cheddar cheese
1 cup coarsely chopped grape tomatoes
1/4 cup chopped fresh cilantro, optional
1/4 cup matchstick cut radishes
Preheat oven to 350 degrees. Heat oil in an oven proof skillet like cast iron. Add corn, peppers, and onion; cook stirring occasionally. Gradually add spinach in batches. Cook until wilted.
Stir in chicken, enchilada sauce and salsa until combined. Gently stir in the tortilla strips. Sprinkle with cheese. Transfer to the oven and bake until bubbly, about 15 minutes. Top the casserole with tomatoes, cilantro and radishes for garnish.
I omitted the cilantro from this dish as I don’t care for the taste. Otherwise is a quick, easy and tasty dinner.
Today is to be partly cloudy with no rain, so it will be a good day to get out to do the shopping. It will be close to 50 degrees.

We love pretzels -- both soft and crunchy. The sodium doesn't seem to affect Tom, but I have to be careful. I laughed out loud at that quote by George Bush, but how true. I'm terrified of getting something 'stuck' and choking.

I'm too old to eat pretzels, I might break a tooth and dentists are expensive! I liked them when I was younger and my teeth didn't crack at the least little thing!

I tend to wake up each morning and think - what shall I make in the way of meals today?
This morning we had a late breakfast of biscuits, scrambled eggs and fried potato wedges and fried bacon, tonight was a toasted tostadas topped wit taco meat, refired beans, salsa and topped with shredded lettuce, avocados, shredded cheese and sour cream! Truly GOOD!!!
