Today is Earth Day which is the largest civic observance in the world, and it’s purpose is to raise awareness about important environmental issues.
The first Earth Day took place in 1970. After witnessing the effects of an oil spill in Santa Barbara, California, U.S. Senator Gaylord Nelson organized a grassroots environmental teach in on college campuses across the country. Many people believe that this first Earth Day celebration marked the beginning of the modern environmental movement.
To celebrate today, plant a tree, help clean up a beach or park, or learn about how you can help locally. Have a Happy Earth Day.

I was taught that no matter where I went, I should always leave it looking better than before I came there. We always cleaned up our trash and even some that was left there before we came. The amount of trash left behind astounds me. People throw it out of the cars along the roadside and make our roadways look terrible.
Very often I see diapers thrown along the road, or bags from fast food restaurants. They belong in trash cans, not on our roadsides and parks and beaches.
As far as oil spills go, I’ll never forget the commercial showing a baby duck washed in Dawn detergent and then hopping away cleanly. If someone makes a mess then they have a responsibility to clean it up.
On Saturdays I always cook for the weekend so that I can rest and relax on Sunday’s . On the menu for today is:
Cream of Mushroom Pork Chops
Makes 4 servings
4 bone in center cut pork chops
3/4 tsp ground pepper, divided
3 Tbsp. olive oil, divided
1, 5 oz package sliced mushrooms
1/4 thinly cut shallot
4 cloves garlic, thinly sliced
1/2 cup dry sherry
1, 5 oz. can of mushroom soup
1/4 cup water
1 tsp Worcestershire sauce
1 tsp. Dijon mustard
1 Tbsp. thinly sliced fresh chives
Let pork chops stand at room temperature for 10 minutes. Pat dry with paper towels and sprinkle evenly with 1/2 tsp. pepper.
Heat oil in a large cast iron skillet over medium high heat, add the pork chops and cook until golden brown on 1 side then flip and cook for a minute more. Transfer the chops to a plate, they will not be cooked through.
Add the mushrooms to the pan, cook over medium high heat, stirring occassionlly until golden brown. Add shallot, garlic and remaining oil, stirring occasionally until softened. Add sherry, cook, stirring constantly and scraping up browned bits from the bottom of the pan until liquid is almost fully completely reduced. Add the soup and water, stirring until mixture comes to a sinner. Stir in Worcestershire, mustard and remaining 1/4 tsp. of pepper.
Nestle pork chops, browned side up, into the mixture in the pan, cover and cook over medium high heat until a thermometer inserted registers 145 degrees, about 8 minutes. Transfer chops to 4 plates or a large platter. Spoon the mushroom sauce over chops and sprinkle with chives.
I’ll be having these with a side of mashed potatoes and some applesauce. I don’t want to waste the mushroom gravy. I rarely eat potatoes but I figure once in a while won’t hurt.
It’s going to be cool today with a high close to 50 degrees. I’m staying in and finishing up a few things that didn’t get done this week. I need to wash the kitchen throw rugs and clean the floor. It’s a mess. Rainy days are good to do the housework.

AMEN! It's everyone's job. For some reason Earth Day reminds me of that old song, "He's Got the Whole World in His Hands."
