Today is also National Chocolate Chip Day which are an essential ingredient in dozens of delicious baked goods - chocolate chip cookies, chocolate chip pancakes, chocolate chip muffins, brownies and bagels. You can find chili recipes that call for theses sweet morsels.
In the 1930’s Ruth Graves Wakefield created the original chocolate chip cookies at her Toll House Inn in Whitman, Massachusetts. Ruth intended to bake chocolate cookies for her guests, but she ran out of baker’s chocolate. She substituted with chopped up semi sweet chocolate morsels and discovered that the pieces did not melt into the dough as she expected. Her cookies were an instant hit. Today, 25% of all the cookies baked in the United States are chocolate chip.
To celebrate today, bake something yummy that has chocolate chips in it and enjoy!

Number one, I absolutely love making chocolate chip cookies. I mean it’s fun. It’s exciting. Beyond the fact that I love making them, I love eating them.

This son lives far away so I’m sure I won’t be able to see him today to celebrate with him. But I was able to visit his home a few years ago now. He’s not been able to come home for awhile, but still we keep in touch. I’ll be sending out the usual card to him filled with birthday wishes and love!
We all love chocolate chip cookies here and I’ve made many batches of them over the years. I love them when they are warm and the chocolate is gooey. There is nothing like a homemade chocolate chip cookie.
I won’t be baking cookies today, but I will be cooking dinner for the weekend. On the menu is:
Spring Herb Roast
Makes 8 servings
2 onions, halved and sliced
1/2 lb sliced mushrooms
1, 3 to 4 lb. rump roast or bottom round roast
1/2 tsp. pepper
1 Tbsp. canola oil
1 1/2 cups water
2 Tbsp. tomato paste
3 garlic cloves, minced
1/2 tsp each dried basil, marjoram and thyme.
Minced fresh parsley
Place onions and mushrooms in a slow cooker. Sprinkle roast with pepper. In a large skillet, heat oil over medium high heat; brown roast on all sides. Transfer to slow cooker
In a small bowl mix water, tomato paste, garlic, basil, marjoram and thyme; pour over roast. Cover and cook on low 5 hours or until meat is tender.
Remove roast from slow cooker, tent with foil. Let stand 15 minutes before slicing. Serve with onion mixture, sprinkle with parsley.
As there will just be me here for dinner, no doubt, I’ll be freezing part of this roast to have another time. It will make some good barbecue beef sandwiches later on. Leftovers are always good!
Today we’re to still be in the 70’s but rain is moving in our way and it will be cooling down. We’ll be back in the 50’s which is typical April temps here. The beautiful balmy days of summer are past, but no doubt they’ll return.

11,223. for a great visit with my sister yesterday, she is now a great grandmother for the 3rd time. I’ve yet to have my 1st one.

What a privilege it its to celebrate another birthday in my family. Thankfully, they are all healthy and happy !

Interesting back story on the Toll House cookies. I enjoy a good chocolate chip cookie every now and then ... but I don't crave them the same way I do a good roast! This recipe is making me hungry!
