Today is National Pecan Day which celebrates one nut native to the United States. It is also a favorite snack and ingredient across the country.
Pecans are a member of the hickory family, the pecan is native to central and southern United States. Pecan is an Algonquian word, meaning a nut requiring a stone to break. They are on excellent source of copper, iron, magnesium, phosphorus, zinc and Vitamin E. Pecans can help reduce LDL cholesterol and increase HDL cholesterol levels in the blood. They are also rich in dietary fiber.
Pecans make great snacks all on their own, but they also make terrific garnishes for other foods such as desert, salad, or the main meal. Sweet or savory pecans can add a little glamor to a dish or be the star of the show.
The United States leads worldwide production of pecans, most of which are produced in Georgia.
To celebrate today, enjoy your favorite pecan recipes. There are many to choose from including pies or cookies. You can top your salad with pecans too.

It’s a Pecan Pie kind of day!

Pecans are my favorite nut and I’ve mentioned before how I love a sundae made with pecans and caramel and chocolate. It’s call a Turtle Sundae. There are also Turtle candies. I also eat pecans often for a snack. They are good and very good for us. I like Pecan Sandy cookies and I love a good pecan pie. I usually buy them and don’t make my own. They do make a good dessert. I’ve also had them in salads, one of my favorites is made with strawberries and pecans.
However the dish I have planned for dinner does not include pecans. On the menu today is:
Broccoli Tuna Casserole
Makes 8 servings
5 cups uncooked whole egg noodles
1 tsp butter
1/4 cup chopped onion
1/4 cup cornstarch
2 cups milk
1 tsp dried basil
1 tsp. dried thyme
1/2 tsp. pepper
1 cup vegetable broth
1 cup shredded Monterey Jack cheese, divided
4 cups frozen broccoli florets, thawed
2 pouches, 6,4 oz. each albacore tuna in water
1/3 cup bread crumbs
1 Tbsp. butter, melted
Preheat oven to 350 degrees. Cook the noodles according to package directions, drain. Transfer to a shallow baking dish coated in cooking spray.
Meanwhile in a nonstick skillet, heat butter. Add onion and cook and stir until tender. In a small bowl, whisk cornstarch, milk and seasonings until smooth. Stir into pan, bring to a boil and cook and stir until thickened. Stir in 3/4 cup cheese until melted. Stir in tuna and broccoli.
Spoon over noodles . Sprinkle with remaining cheese. Toss bread crumbs with melted butter and sprinkle over casserole. Bake covered 45 minutes. Uncover and bake until cheese is melted, about 20 minutes longer.
Serving size is 1 1/4 cups.
I love tuna casserole and the fact that broccoli has been added, makes it healthier. I happened to have fresh broccoli so I used that.
This is the last day of our nice summer like weather so I thought I’d make a trip to visit my sister today. It’s such a great day to get out about!

Pecans are good and good for you too!
There was a pecan orchard about 60 miles from our farm in Illinois. My folks always went there, and we enjoyed the pecan desserts that Mom fixed.
My mother used to make the best pecan pie! Lately, however, I find it far too sweet. (Am I the only one whose taste buds change over time?)
That mason jar is sure an attractive way of displaying them! I want to do that, too.

I like tuna & noodles.
I used to make tuna, small shell pasta, frozen mixed vegetables & Italian dressing.
And then you said:I love a sundae made with pecans and caramel and chocolate. .... Making my mouth water. I am not a chocohollic, but the choc syrup on a sundae sets it off.
I just has some pecan pie yesterday... love it.
We cracked and shelled a couple buckets full a few weeks ago, getting a couple quarts of nuts. That is one thing that pecans do, give a lot of nut inside that shell.
