THOUGHT FOR TODAY

I don’t think any of us could ever forget this day. Even though I wasn’t even born yet, I am one who can’t forget this day. I grew up hearing about this date. History is a favorite subject of mine and although it was terrible, I will never forget. War is a terrible thing. There is nothing good about it. Hopefully the memory will prevent it from ever happening again.
I saw the effects of war in my own father, who was wounded in battle, but in Europe during the war. He was injured and suffered those injuries all of his life. The shrapnel from a bomb was impeded in his head and other parts of his body and when you witness the effects of war, you can never forget.
Today is my day to cook again here at my house and on the menu is :
Skillet Chili Mac
Makes 6 servings
12 oz elbow noodles, rotini, or fusilli
2 Tbsp. olive oil
1 onion, diced
2 green bell peppers
1 stalk celery, diced
3 cloves minced garlic
1 lb. lean ground beef
3 Tbsp. chili powder
1/2 tsp. salt
1, 28 oz. can diced tomatoes
1 cup beef broth
1 can, 15 oz kidney or chili beans, rinsed
1/2 cup sour cream
3/4 cup shredded cheddar cheese
Sliced scallions for garnish, if preferred
Cook pasta 2 minutes less than package directions. Drain.
Meanwhile heat oil in a large skillet over medium high heat. Add onion, peppers, and celery and cook stirring often until softened. Add garlic and cook stirring for 30 seconds. Add beef, chili powder and salt; cook, stirring and breaking up with a spoon until beef is no longer pink.
Add tomatoes with their juice and broth, bring to a boil over high heat and cook 2 minutes. Add beans and pasta, reduce heat to medium and cook stirring often until hot. Remove from heat, fold in sour cream. Serve topped with Cheddar and scallions, if desired.
This is a good dish to make when you have leftover chili but I don’t have any so I’ll be following the recipe as it is.

Wednesday - Baked Spaghetti
Friday - Salmon Noodle Casserole
Weekend - Pineapple Ginger Chicken Stir Fry

May we never forget and make this world a better place.
Like you, I wasn't born until years after Pearl Harbor. But the horrors captured by film and word have had a profound effect on my own life.
As with 911, I pray we as a nation will never forget the atrocities ... and vow to do better.
Of course, I was not alive either, but my parents had just gotten married Nov. 22, 1941 and my dad was immediately called away - but it was hard on them.
I'm saving your chili-mac recipe! I have never made it from scratch before. I always admire the way you plan your menus. I get up in the mornings and think, 'What we eat today?'
