I will be celebrating today, not because I want to drink alcohol, but for the fact that we have the freedom to choose. I do believe that every person should have a choice in the way they want to live. Even the good Lord gave us a freedom of choice.
I’m thankful for the freedoms we have in this great country.
We all disagree on many things, but we can agree to disagree with respect for each others choices.
It’s my day to cook up something new here and on the menu is:
Tuscan White Bean Soup
Makes 8 servings
1 lb. dried cannellini or great northern beans
1 Tbsp olive oil
1 1/2 cups diced onion
1 cup diced carrots
1 cup diced celery
2 Tbsp. chopped fresh garlic
4 cups chicken broth
4 cups water
2 dried bay leaves
Parmesan cheese, optional
6 cups chopped fresh kale
1 15 oz. can diced tomatoes with basil and oregano, drained
2 tsp fresh minced rosemary.
3 Tbsp. white wine vinegar
1 tsp. salt
Ground pepper to taste
Sort beans, then rinse under cold water and transfer to a large bowl. Add 3 quarts of cold water, cover, and soak at room temperature for 8 to 24 hours. Drain and rinse beans.
Heat oil in a large pot over medium heat. Add onion, carrots and celery; cook until starting to soften about 8 minutes. Stir in garlic and cook until fragrant.
Stir in broth, the soaked beans, bay leaves and Parmesan, if using. Bring to a boil and cook 5 minutes. Reduce heat to low, partially cover, and simmer until the beans are nearly tender. About 45 minutes.
Stir in Kale, tomatoes, and rosemary. Partially cover and cook until beans are tender.
Discard bay leaves. Stir in vinegar and salt; season with pepper to taste.
I chose to use canned great northern beans instead of dried ones today. It speeds up the process. I didn’t use the Parmesan. I also will using spinach instead of Kale.
We are a little warmer with a high of 48 degrees here, but it’s still chilly enough to enjoy a hot bowl of soup. I love any kind of bean soup.
The pictures today are of my last trip to Florida in 2019. I’m looking forward to going again.

There is nothing like sunshine and warmth when winter comes.
I made a copy of your soup - that sounds so good.
You know I think it is great that we have freedoms - I get it - but sometimes the important values that made America great - are lost when we give the rules up that held us into place.
Oh, what freedoms we take for granted! Yes, we can differ but do so respectfully.
Your soup recipe sounds delish ... good choice, swapping the spinach for kale!
