THOUGHT FOR TODAY
People go to the zoo and they like the lion because it’s scary. And the bear because it’s intense, but the monkey make people laugh.

One of my grandsons used to have a stuffed monkey and carried him around wherever he went. He wouldn’t leave the house without monkey along. So for this reason I’ll celebrate today. And when the babes were young I’d refer to them as monkeys. They would jump around all over the place. My sisters and I used to refer to ourselves as the 3 monkeys, hear no evil, see no evil and do no evil. Whenever we went someplace we were expected to have a seat and not move or make any noise.
For today, I’m not monkeying around I’m going to lunch with friends from my high school reunion group. Afterward I’m going to try and pick up some groceries too.
I have made up a new menu to do my shopping from and on the menu for next week is:
Monday - Broccoli Cheddar Soup
Wednesday - Creamy Rotisserie Chicken Noodle Casserole
Friday - Toaster Oven Quesadillas
Weekend - Ham and Potato Casserole
On the menu for today’s dinner is:
Baked Spaghetti
Makes 10 servings
1 pkg. 16 oz, spaghetti
1 lb. ground beef
1 onion chopped
1 jar pasta sauce
1/2 tsp seasoned salt
2 eggs
1/3 grated Parmesan cheese
5 Tbsp. melted butter
2 cups cottage cheese
4 cups mozzarella cheese
Chopped fresh basil, optional
Preheat oven to 350 degrees. Cook spaghetti to package instructions for all al dente. Meanwhile in a skillet, cook beef and onion over medium high heat until beef is no longer pink and onion is tender, breaking beef into crumbles, drain. Stir in pasta sauce and seasoned salt; set aside.
In a large bowl, whisk eggs, parmesan cheese and butter. Drain spaghetti and egg mixture and toss to coat.
Place half of spaghetti mixture in greased baking dish. Top with half the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Place baking dish on a rimmed baking sheet.
Cover and bake for 40 minutes. Uncover and bake 25 minutes longer. Let stand before serving , if desired sprinkle with basil.
As this is a large recipe, I’ll be cutting it in half for just me. You can fix it ahead of time and refrigerate until you are ready to bake it. You could also substitute ricotta cheese for cottage cheese if desired. It sounds delicious to me!
It’s going to be a busy day here and the weather is very cold outside. Not my choice to run around in, but I’ll bundle up and do fine. Keep warm, everyone !

ADVICE FOR TODAY
One little monkey jumping on the bed! She fell of and bumped her head. Mama called the doctor and the doctor said: No more monkey’s jumping on the bed !

I grinned all the way through this, Ma. I've never been accused of being a monkey, but have sure done my share of monkeying around.
I hope your girlfriends' luncheon was great fun ..... and now you're home safe and warm again!
Definitely agree that monkeys make folks laugh, at the zoo I think more folks linger at the monkey cages...
Sherry's brother Lefty, sneaked a monkey back into the states after WWII. He served in the Pacific and picked up the monkey there.
Sherry said the monkey did not like her and she did not like it, but he kept the family entertained....
Anyway loved the pictures of your little monkeys and oh YES what an angel...
