I keep my favorite blanket on the arm of my rocking chair which is where I spend most of my time in the winter . It does keep the chill off on cold winter days. Our daytime hours are gradually getting longer. I’ve already seen a couple of minutes added to the sunset time. It depends on where you live.
Slowly but surely I’m going to start waking up from these days of hibernation. Added daylight will help me to do that. Ground hogs day is coming and then we’ll see if Spring might just be early this year.
The minute winter arrives I start thinking about how soon Spring will come. It’s the season I love the most. It’s a time of the earth awaking and new birth abounds.
Days will be cold and snowy for a while yet, but thoughts of Spring will carry me through. I don’t know why December isn’t considered Winter, but it is actually a part of fall.
We have a winter storm coming our way and after today I’ll be in the house until Christmas Eve when I hope to make it out to Church if the weather permits. We can only wait and see.
It’s an early evening service and DS#5 and his family will be picking me up to go with them.
It’s my day to cook here and on the menu is:
Rotisserie Chicken Noodle Casserole
Makes 4 servings
3 Tbsp. olive oil, divided
1 cup chopped onion
1 cup chopped carrots
1/2 cup chopped celery
2 Tbsp. flour
1 tsp. salt
1/2 tsp ground pepper
2 cups milk
3 cups cooked egg noodles
2 cups shredded rotisserie chicken
3/4 cup thawed frozen peas
1/2 cup bread crumbs
Preheat oven to 400 degrees . Heat 2 Tbsp. oil in a large skillet over medium heat. Add onion, cook, stirring until softened and begin the brown. Add carrots and celery, cook until almost softened. Sprinkle with flour, salt and pepper. Increase heat to medium high and add milk. Cook stirring, until thickened and bubbling. Remove from heat and stir in noodles, chicken and peas.
Transfer to a baking dish. Combine breadcrumbs with remaining 1 Tbsp. oil in a small bowl; sprinkle over casserole Bake until browned and bubbling. About 20 minutes.
I also made up a menu but really don’t need to buy many groceries today, still I do have some errands to run.

Friday - Ziti Bake
Weekend- Ham and Broccoli Breakfast Casserole

Winter is here, yes, and Spring WILL come. The seasons pass as we enjoy life and make the best of it. I enjoy seeing kids enjoying the snow and remember when we looked forward to the snow, North Carolina did not get much, but we kids loved it making sleds. LOL

Come Thursday night our temps are supposed to dip in the teens, so all the grocery stores were nuts this morning with people stocking up. We've had fuzzy blankets/throws out since Thanksgiving. At least it's dry. Stay safe!
