I was a homeowner for many years, but the cost of upkeep on that home got to be more than what I could afford. So when I moved from that home, I choose to rent instead of buying another one. My rent includes the upkeep of my home. The landlord has maintenance men that fix everything and it doesn’t cost many any thing. It’s all included in my rent. I was blessed to find a place that has everything I need and I no longer have to worry about upkeep being more than I can afford.
I am very thankful for the roof over my head today and appreciate my warm cozy home. For me, there is no place like home for comfort. I get to visit warmer realms when winter comes, but then I always enjoy coming home again.
Today is my day to cook for the weekend and on the menu is:
Turkey Pot Pies
Makes 2 pies, 6 servings each
2 medium potatoes, peeled and cut into 1 inch pieces
3 medium carrots, cut into 1 inch slices
1 onion, chopped
1 celery rib, diced
2 Tbsp butter
1 Tbsp olive oil
6 Tbsp. flour
3 cups chicken broth
4 cups cubed cooked turkey
2/3 cup frozen peas
1/2 cup plus 1 Tbsp. heavy whipping cream, divided
1 Tbsp. minced fresh parsley
1 tsp. garlic salt
1/4 tsp. pepper
2 sheets refrigerated pie crust
1 egg
Preheat oven to 375 degrees. In a dutch oven, saute potatoes, carrots, onion and celery in butter and oil until tender. Stir in flour until blended; gradually add broth. Bring to a boil until thickened. Stir in turkey, peas, 1/2 cup cream, garlic, salt and pepper.
Spoon into 2 ungreased pie plates. Unroll crust; place over filling. Trim crusts and seal to edge of pie plates. Cut a decorative center or cut slits in crusts. In a bowl, whisk egg and remaining 1 Tbsp. cream; brush over crusts.
Bake until golden brown, 45 minutes. Let stand 10 minutes before cutting.
If the crust is browning quicker than you want, place a loose piece of foil over your pot pie. They will keep about 4 days in the refrigerator. This is a great way to finish off those thanksgiving leftovers.
Today we are once again colder. The weather didn’t stay warmer very long at all and it looks like we’ll be in the 40’s and 30’s through next week.

High winds were blowing when I went to bed last night bringing with them colder weather.
Having all those benefits included in the rent is wonderful! I don't know how much longer Tom will be able to keep maintaining the little stuff. You're right, those things that come with home ownership aren't inexpensive. Keep warm up there!
There is much to say about the Roof over our heads. Growing up I thought everyone should OWN their own home. But in adult hood, that is not always the case.
A person who owns but cannot afford the up-keep is on a downward spiral. I have said now for years, there comes a time when rent pays off in the long run especially for the single senior.... Sherry & I discuss this often...
