I just love maple syrup!

I prefer maple syrup to use for my topping. It tastes better than other syrups that are available. If you’ve never had it on vanilla ice cream, you need to try it. It’s absolutely delicious.
Many recipes also call for the use of maple syrup, thanks to its delicious flavor. So I’ll definitely celebrate this day.
The scout camp that DS#1 used to go to would tap the trees and make their own maple syrup to sell. He’d always send me some. What a wonderful gift!
Today is also our family get together for Christmas and I’ll be taking my lasagna to share with every one, so I actually won’t be doing any cooking, only heating it up to serve.
But on my weekly menu I had planned to fix:
Pineapple Ginger Chicken Stir Fry
Makes 4 servings
1 can, 20 0z., unsweetened pineapple chunks
1 Tbsp. cornstarch
3 Tbsp.soy sauce
2 Tbsp. honey
1/4 tsp. Cinnamon
1 Tbsp. vegetable oil, divided
1lb. boneless skinless chicken breasts, cut into 1 inch cubes
1 small onion, chopped
1 tsp. ginger
2 garlic cloves, minced
hot cooked brown rice
Minced fresh cilantro, optional
Drain pineapple, reserving juice . Mix cornstarch, soy sauce, honey, cinnamon and reserved juice until smooth. In a skillet heat 1 Tbsp. oil over medium high heat, saute chicken until lightly browned. Remove from pan.
In same pan saute onion, ginger and garlic in remming oil, until crisp tender. Stir in cornstarch mixture, add to pan with chicken and pineapple chunks. Bring to a boil, stirring constantly, cook and stir until sauce is thickened and chicken is cooked through.
Serve with rice and sprinkle with cilantro, if desired.
I’ll be saving this recipe for another time as it does sound quite good.
DS#5 and his family will be hosting our celebration today and I’m so excited to be seeing everyone again. It’ll be our last holiday for the year and we won’t be getting together again until March when my birthday comes or in April when Easter comes.
They say we may have more snow today so everyone take care traveling. The roads could get slick in places.

National Maple Syrup Day - I do love maple syrup. ☺
You know, I can't recall ever having real maple syrup. One of my former coworkers brought me a little (Christmas-tree shaped) bottle the last time she was in Massachusetts, but we've never opened it.
