Years ago I had a Gingerbread House decorating party, and many of my children do it in their own homes with their family. It is a fun thing to do and a tasty one too as you have to sample the frosting and candy used to decorate the houses.
A couple of my friends and I constructed the houses out of graham crackers to speed up the process and then when everyone came, all they had to do was decorate their house with frosting and candy. It took a large amount of both in order to have enough for everyone. That is what is in my pictures today. I also found some cute aprons for everyone to wear at the craft store.
This is day for me to cook up something new and on the menu today is:
Cabbage Roll Casserole
Makes 8 servings
3 Tbsp olive oil, divided
1 lb lean ground beef
1 cup chopped onion
3 cloves garlic, minced
2cups chicken or beef broth
1, 15 oz., can tomato sauce
1 cup long grain white rice
1/2 tsp. salt, divided
1/2 tsp. ground pepper, divided
8 cups chopped green cabbage
2 tsp. dried dill
1/4 tsp. crushed red pepper
1 1/2 cups shredded Cheddar cheese
Preheat oven to 350 degrees. Lightly coat a baking dish with cooking spray.
Heat 1 Tbsp. oil in a large pan over medium heat. Add ground beef and onion; cook, stirring until beef is no long pink. Add garlic and cook until fragrant. Stir in broth, tomato sauce, rice, 1/4 tsp salt and pepper each. Bring to a simmer. Cover, reduce heat maintain simmer and cook, stirring once or twice, until rice is tender. Uncover and remove from heat.
Meanwhile heat remaining 2 Tbsp. oil in a large skillet over medium heat. Add cabbage, dill, crushed red pepper and remaining 1/4 tsp. each salt and pepper. Cook, stirring until cabbage is just tender. Remove from heat.
Spread half the cabbage in the bottom of baking dish. Top with half the beef mixture and then half the cheese. Repeat with remaining cabbage, beef mixture and cheese. Bake until hot and cheese has melted and started to brown, about 25 minutes.
Some liked this recipe better with tomato soup instead of sauce and I think I’ll be trying that. I had made a similar recipe done in the crockpot before and it didn’t call for the cheese, but I think this might be a welcome addition.
I’m going to start wrapping up gifts today in order to be ready for the weekend. I’ll probably use a lot of gift bags as they are easier for me than wrapping. All I have to do is stuff the gift in a bag with lots of tissue paper.

I loved the story of gingerbread. I find these stories fascinating! I also love cabbage rolls!
Mama did make ginger bread a few times. But as far as I can remember we NEVER had a Gingerbread house. However every child my age probably had the stories read or told to them of the gingerbread houses...Love from Florida. Trying to relax.....
