I love Christmas sweaters and don’t think of them as ugly, but to me they are very festive. I have a lot of them and wear them most of December. I think I have enough of them I could wear a different one each day of the month. My favorite ones have snowmen on them.
At one of our family Christmas get togethers, everyone was asked to wear their Christmas sweaters and a prize was given to the best one. DS#6 won the prize as he had decorated his own Christmas sweater with sparkling tinsel on it. That is what my pictures are of today. DD and her hubby choose to wear the sweaters that DDH and I wore our first Christmas after we were married. I kept them for years and years in my cedar chest and she discovered them.
It’s Friday and my day to cook. Not only what is on my menu for today but I’m making Lasagna for tomorrow. I decided to share both recipes today.
My lasagna recipe is:
1 pound Italian sausage
1 clove garlic, minced
2 Tbsp. basil
1/2 tsp salt
1, 1 lb can crushed tomatoes
2 6 oz cans tomato paste
10 oz. lasagna noodles
2 eggs
3 cups Ricotta or cream style cottage cheese
1/2 cup grated Parmesan cheese
2 Tbsp. Parsley flakes
1/2 tsp pepper
1 lb. mozzarella cheese
Makes 8 to 10 servings
Brown meat slowly; spoon off excess fat. Add next 5 ingredients. Simmer uncovered 30 minutes, stirring occasionally. Cook noodles in boiling salted water till tender; drain; rinse. Beat eggs; add remaining ingredients except for mozzarella.
Layer half the noodles in a baking dish; spread with half the ricotta filling; add half the mozerella cheese and half the meat sauce. Repeat. Bake at 375 degrees for 30 minutes. Let stand 10 minutes before serving.
I’ll be putting mine in the fridge overnight and heating it up for tomorrow’s family feast. It also freezes well and sometimes I make two at a time and freeze one for another time.
On the menu for today is:
Salmon Noodle Casserole
Makes 6 servings
8 oz. egg noodles
1 cup sliced asparagus
2 Tbsp olive oil, plus 2 tsp. divided
1 medium leak, halved lengthwise and thinly sliced crosswise
2tsp. minced garlic
1/4 cup flour
3 1/2 cups milk
1 Tbsp. Dijon mustard
1/2 tsp salt
1/2 tsp. ground pepper
1/4 tsp. cayenne pepper
2 6 oz cans boneless, skinless pink salmon, drained and flaked
1 cup frozen peas, thawed
1/2 cup breadcrumbs
1/2 cup shredded Cheddar cheese
1 Tbsp. finely chopped flatleaf parsley
Preheat oven to 375 degrees. Bring a pot of water to boil over high heat; cook noodles, stirring occasionally until slightly softened by still somewhat firm. Add asparagus; cook, stirring often, until it is tender crisp and the noodles are fully cooked. Drain and set aside.
Wipe the pot clean. Add 2 Tbsp oil and heat over medium high heat. Add leeks; cook until softened and translucent. Add garlic, cook stirring until fragrant. Sprinkle with flour. Reduce heat to medium and cook, stirring constantly for 2 minutes. Gradually add milk, whisking until smooth. Bring to a gentle boil over medium high heat, whisking often. Reduce heat to medium low; gently simmer, whisking often until thickened. Remove from heat. Add mustard, salt, pepper, and cayenne; stir until well combined. Add noodle asparagus mixture, salmon and peas. Fold until noodles are full coated. Spread evenly in a baking dish
Combine bread crumbs, parsley and remaining 1 tsp. oil in a medium bowl; stir until mixed well. Sprinkle evenly over the casserole. Bake until the cheese is melted and the topping is golden brown. Let stand 5 minutes before serving.
I have no asparagus today so will omit that today. For me the peas will do. I also didn’t have any leeks so I used an onion instead. I just try to make do with what I have.
We’re to be colder today and it’ll be cloudy with a chance of snow flurries. So it will be a good day to keep warm working in the kitchen.

Great sweaters your DD found! Years ago, my mother knitted herself and my dad matching sweaters. I loved the way they looked but have no idea whatever became of them.
I've never had the yen to buy a funny/ugly sweater -- probably too cheap. A couple of years ago, however, I looped a few strands of the battery-powered fairy lights around my neck and called it Christmas.

I enjoy the cute, silly and crazy sweaters chosen for the season. Christmas should be fun and wonderful. If we have to be silly sometimes, NO PROBLEM.
