I have a lot of friends but I have to say my very best friend is my daughter. We do a lot together and always support each other.
Years ago her 2nd grade teacher told be that when she asked, my daughter told her that her mom was her best friend.
Now she is mine. During the teen years we weren’t always close but as adults we do a lot together. She’s always around to give me a helping hand. Most recently she helped me to plant flowers in my flower boxes. When I had to move she was always there helping me get ready by clearing out my old house.
We love to go shopping together and have lunch together as often as we can. Since she now has a family of her own and works at a job, I don’t get to see her as much as I used to do. But right now it’s summer vacation time and she doesn’t have to work, so we’ll have more opportunities to get together.
I don’t know what I’d do without her. She calls me every evening to check on me and sometimes she’s the only human being I talk to that day. She does make a big difference in my life.
It’s my day to plan a new menu for next week and make up my grocery list from that.
I’m trying to keep things light and easy here so on the menu for next week is:
Monday - Crabmeat Boats
Wednesday - 20 Minute Creamy Chicken Skillet with Italian Seasoning
Friday - Summer Shrimp Salad
Weekend - Grilled Caprese Chicken
On the menu for today is:
Confetti Kielbasa Skillet
Makes 4 servings
1 Tbsp. oil
7 oz. Smoked turkey kielbasa, cut into 1/4 inch slices
1 onion, halved and sliced
1 cup sliced mushrooms
2 garlic cloves minced
1/2 cup chicken broth
3/4 tsp. Mrs Dash Garlic and Herb seasoning blend
1 can black beans, rinsed and drained
1 pkg. ready to serve brown rice
1 cup frozen corn or fresh if available
1/2 cup chopped sweet red peppers
1 1/4 tsp cilantro
In a large skillet, heat oil over medium high heat. Add kielbasa, onion and mushrooms. Cook and stir until vegetables are tender.
Add garlic and cook one minute longer.
Add broth and seasoning blend, stirring to loosen any brown bits from pan. Bring to a boil and cook 3 minutes or until liquid is almost evaporated. Stir in remaining ingredients and heat through.
This recipe called for fresh cilantro but I will substitute with dried and I will use canned corn instead of frozen.
We’re to have partly cloudy skies with temps in the mid 70’s today with on a slight chance of rain, so it’s look like a good day to get out and do my shopping without getting wet. We really need to dry out here.

And that recipe sounds yummy. I LOVE Mrs. Dash the Garlic and Herb blend, it gives me just the right taste of garlic. I can't cook with real garlic! Can you tell I'm not a chef? LOL!

I've not given it much thought, but in many ways my son is my best friend. We may not talk so often, but I know he always has my best interests at heart and would drop everything to be here if I needed him.
