Today is International Fairy Day which is a day for fairy believers young and old to celebrate the stories, magic and history of the Fair Folk.  For centuries, fairies have been an important part of Celtic culture.  In ancient legends, these mythological creatures are described as intelligent, micheiveous and magical.  They have the ability to fly and cast spells, and they live in Tis na nog, the land of eternal youth.  Some say humans don’t often see fairies because of the division between two worlds, but sightings can occur at twilight or during Beltaine, MidSummer’s Ever or All Hallows Eve.

In his play, Peter Pan, J.M. Barrie wrote that when the first baby laughed, the laugh broke into a thousand pieces and that was the beginning of fairies.  

Today is the perfect opportunity to relive your childhood fantasies and celebrate the joy and magic of the fairy world.  Read a classic fairy take, build a fairy house, or take a stroll through the woods.  You never know,  you might stumble across something magical.

I love fairytales mostly because they have happy endings.  I’ve never seen a real fairy, but the tooth fairy left money for me when I lost a tooth as a small child.  Most of the fairies I see these days are in garden centers or peoples yards.  That is what my pictures are of today.  A visit to a garden center nearby.

It’s supposed to be another beautiful summer day here with temps in the 80’s so it should be a great day to enjoy being outside.  

It’s been lazy and quiet here at DD’s house.  The dogs are just about as lazy as I am.  We make a good team.

I should be cooking up something new today and on my menu is:

Fish Tacos with Guacamole

Makes 4 servings

2 cups angel hair coleslaw mix

1 1/2 tsp. vegetable oil

1 1/2 tsp lime juice

guacamole:

1 ripe avocado, pealed and quartered

2 Tbsp. sour cream

1 Tbsp. finely chopped onion

1 Tbsp. fresh cilantro

1/8 tsp salt 

dash pepper

tacos:

1lb. tilatpia fillets, cut into 1 inch pieces

1/4 tsp. salt

1/8 tsp pepper

2 tsp. vegetable oil

8 corn tortillas, warmed

Optional toppings. Hot pepper sauce, chopped tomatoes, green onions and jalapeño pepper

In a small bowl, toss coleslaw mix with oil and lime juice; refrigerate until serving.  In another bowl, mash avocado with a fork, stir in sour cream, onion, cilantro, salt and pepper

Sprinkle tilapia with salt and pepper.  In a nonstick skillet, heat oil over medium high heat.  Add tilapia; cook until fish just begins to flake easily with a fork.  About 3 to 4 minutes on each side.  Serve in tortillas with coleslaw, guacamole and desired toppings.  

One serving equals two tacos

Since I’m at my daughters I don’t have all the ingredients for this dish here, so will probably make a grilled cheese sandwich instead.  I’ll definitely save this recipe for when I’m back home.
