Today is National Hug Your Cat Day which honors our furry friends, our cats.  

In Ancient Eygypt, cats were revered and even worshipped as symbols of grace and poise.  Today is the perfect opportunity to put your cat on a pedestal and thank her for all those times she has curled up next to you after a long day.

Showing your furry friend some affection is healthy for you.  Studies have show that hugs from animals can lower blood pressure and decrease stress.

Celebrate today and hug a cat and while you’re at it, throw in some grooming a little catnip too!

I have some grand cats as well as grand dogs here and am thankful for all of them.  I used to have cats at my house and miss them very much.  They lived long and adventures lives.  I had a black one named Spooky who lived to be 18 and she would spend hours sitting on my shoulder.  She was truly my shadow and was always with me.  

DS#5 has several cats at his house and it’s a joy to visit them and give them hugs. They are all very affectionate. 

Today is the day of my grandson’s, our Xfactor’s, birthday party and although it’s on the cool side, it is to be a very sunny day and we’ll be celebrating outside.  

I made up a bowl of macaroni salad, as usual, to take along to share.  DD is having chicken and all the fixings at the party.  It’s going to be a great day. 

I won’t cook but had planned to have:

 Slow Cooked Pepper Steak

Makes 6 servings

1 1/2 labs. beef top round steak

2 Tbsp. oil

1 cup chopped onion

1/4 cup soy sauce

1 garlic clove, minced

1 tsp. sugar

1/2 tsp. salt

1/4 tsp. ground ginger

1/4 tsp pepper

4 medium tomatoes cut into wedges or a can of diced tomatoes, undrained

1 large green pepper 

1 Tbsp. cornstarch

1/2 cup cold water

Hot cooked noodles or rice

Cut beef in strips.  In a large skillet, brown beef in oil.  Transfer to a slow cooker.  Combine the onion, soy sauce, garlic, sugar, salt, ginger and pepper and pour over beef.  Cover and cook on low until meat is tender, about 6 hours.  Add tomatoes and green pepper, cook on low until vegetables are tender, about 1 hour longer. 

Combine cornstarch and water until smooth.  Gradually stir into slow cooker.  Cover and cook on high until thickened. About 30 minutes longer. Serve with rice or noodles.

This is a delicious dinner but since I’ll be eating at the party there is no need to cook today.  Hopefully I bring some lefteovers home for tomorrow too.

DD doesn’t have any cats, but does have 2 dogs that I can pet today and give hugs to.
