Today is National Dog Day, which honors man’s best friend for over 15,000 years. we rely on our wonderful canine companions to keep us safe, bring us comfort and love us unconditionally. Today is an opportunity to show our deep appreciation for these remarkable animals and to find homes for all dogs in need of a loving family.
To celebrate today, adopt a dog from your local shelter, take your dog for long walk, or treat your dog to a new toy.

Here at my house our dogs are considered members of the family and we have a new one. Meet Radar, who was adopted by one of my grandsons recently. They had a beloved pet that died in March this year and decided it was time to get another. I’ve yet to meet him in person, but am sure we’ll be friends, Grand’ma’ always treats in her pocket to share.
I’ve shown the other pictures of my grand dogs before and that is what the rest of the pictures are of today. Except for the one below, George, who was just adopted yesterday by another grandson. He decided on a cat, not a dog. I no longer have any pets of my own, but now get the better part. Dogs and a cat to love without any of the work.
Today is the day I make up my menu for the week ahead so that I can do my grocery list. I’ve found many healthy recipes to try online and have had fun preparing them and eating them too. I used to get tired of having the same old things but not any more.
On the menu for the coming week is:
Greek Kale Salad with Quinoa and Chicken
Panko Crusted Pork Chops with Asian Slaw
Salmon and Asparagus with Lemon Garlic Butter
Spaghetti Squash and Meatballs
Salmon Caesar Salad
Mozzerarella, Basil and Zucchini Frittata
On the menu for today is:
Pork Chops with Garlicky Broccoli
serves 4
1 1/2 lbs brocolli, stens trimmed and cut into spears
6 tbsp. extra virgin olive oil, divided
1 cup panko whole wheat bread crumbs
1/4 c. grated Parmesan cheese, plus more for serving
1 c whole wheat flour
1 egg, lightly beaten
4 boneless pork chops, trimmed
3/4 tsp. salt, divided
1 tsp. lemon juice
4 cloves garlic, thinly sliced
1/4 tap. crushed red pepper
2 tbsp. red wine vinegar
Chapped thyme for garnish if desired.
Position rack in upper third of oven, preheat broiler too high. Line a rimmed baking sheet with foil.
Toss brocolli with 1 1/2 tbsp oil on prepared pan and spread in even layers. Grill, stirring once, until chared in spots, about 10 minutes. Transfer to bowl and set aside.
Meanwhile combine breadcrumbs and Parmesan in a shallow dish. Place flour in another dish and egg in a third. Sprinkle pork with 1/4 tsp. salt, then dredge in flour, shaking off excess; dip in egg, lifting excess drip off, coat with breadcrumb mixture.
Heat 3 tbsp. oil in large skillet over medium high heat. Add the pork and cook turning once, until golden brown and reads 145 degree on meat thermometer, about 6 minutes. If pork browns too quickly reduce heat to medium. Transfer to plate and drizzle with lemon juice. Tent with foil.
Wipe pan clean. Add remaining 1 1/2 tbsp. oil, garlic and crushed red pepper and cook over low heat, stirring until garlic is sizzling. Remove from heat and stir in vinegar and remaining 1/2 tsp salt. Drizzle over the reserved broccoli and toss to coat.
Serve the pork and broccoli with more Parmesan and thyme, if desired.
I’ll also be having some leftover baked sweet potatoes with this dish, making for a very colorful plate full of deliciousness.
Yesterday I got out to the store to refill my prescription and the pharmacy also had flu shots available. This is the earliest I’ve got one, but now I have. Hopefully I’ll be protected from the flu.
This morning It’s raining outside so today will be a good day to stay in and get some housework done.

You have some good meals planned! I don’t do menus really but I think ahead to what I have and what we are hungry for. Today will be chili dogs for our main meal! Probably around 3:00. We stay up late, sleep late and eat late! Works for us!

How wonderful to rescue! I kind of wish we'd gone that route back in 2013, but wouldn't take for my crazy fur babies. Radar looks like he realizes he's won the canine lottery. :) Congratulations on both new arrivals!
So cute with the new fur family members! Always a treat to see pictures of them. I hope you share that recipe with the spaghetti squash. It sounds like it will be tasty!
