Today is National Soft Ice Cream Day which is also known as soft serve, this swirled delight is served using a special machine. Ice cream vendors also use a special technique to double the amount of air in soft ice cream which creates the light smooth texture.
Saft ice cream has been around for about a century. Although it’s exact origins are unknown, we do know the first reference to soft ice cream appeared in the eery 1900’s . At that time only a few types existed. Now most ice cream shops serve a variety of fun flavors.
A summer day is the perfect time to enjoy this delicious snack. Grab a big cone full of soft ice cream today to celebrate!

Ice cream is an ever popular snack for summertime, and soon these days will be ending so better to get some now before the season is over. Most ice cream stands close up here after labor day. The season will soon be over.
I’ve yet to visit one so it’s best I do that soon if I want some. Although I’m trying to avoid them. I’ll regret it if I don’t when winter comes. I like to make all the summertime memories I can so they’ll tied me through the long cold winter.
I’ve not done much at all this summer but thankfully some of my children have and that’s what today’s pictures are of. DS#4’s family on a day trip to Sanibal Island . They got some beautiful pictures of the beach there.
Ah, the joys of youth, you don’t miss them until you no longer have them.
Meanwhile I’m trying to eat healthier to keep me in shape and on the menu for today is:
Lasagna with garden salad and dressing
1 lb. ground turkey
2 cups marinara sauce
1 1/2 c. fat free cottage cheese
1/4 c. shredded parmesan cheese
1 tsp italioan seasoning
6 whole wheat lasagna noodles
1 cup light mozzarella, shredded
Finely chopped parsley, optional for garnish
In large skillet cook ground turkey. Once cooked, stir in marinara sauce, set aside
Meanwhile in a medium mixing bowl, combine cottage cheese, parmesan cheese and italian seasoning.
Preheat oven to 350 degrees and in an 8 by 8 by 11 inch baking dish that has been sprayed with cooking spray, layer 1/3 meat sauce, 2 to 3 noodles and then the cottage cheese mixture. One more layer of meat sauce then top with mozzarella.
Cover with foil and bake 20 minutes. Remove foil and bake another 10 minutes
Let rest for 20 minutes before serving.
Makes 6 large servings
I haven’t been able to get whole wheat pasta yet, so had to use regular. But the turkey meat will make this dish healthier than usual.
I got a surprise in the mail yesterday, A gift from DS#6 and kids. They send me a beach bag and lots of cards to cheer me. That is pictured below. They made me feel very special and very loved.

What a sweet gift for you! I bet it brought a big smile on your face Ma! And lovely pictures of your other son enjoying the time at that beach! I like soft ice cream and also yogurt. We have self serve soft yogurt shops here but you can't sit inside the store to eat them and who wants to eat yogurt outside in 115 degree heat? It doesn't sound too appealing so will wait til it cools off a bit. Yum on the lasagna!
