Today is also International Youth Day which has a purpose to raise awareness about the state of young people around the globe. It is our opportunity to think about the different problems that youth of today faces such as malnutricial and diseases and how to work together to find solutions. Together we can make a difference.
This day was designated in 1999 by the General Assembly of the United Nations as International Youth Day. The hope was that people would organize activities on this day that would educated the public about issues that involve youth. The assembly also wanted to promote the World Program of Action for Youth, which is dedicated to finding solutions to these situations.
Today think about young people you know that could use a friendly hand. Use today to offer your support.

August is a busy birthday month for our family. There are still more to come, but this little granddaughters birthday is one of long distance celebrations. Truthfully not so far away as some, but I usually only get to see her for special occasions and family get togethers. She’s a cutie and the baby of her family, in fact she is my youngest grandchild. A card will be put in the mail today with my love and birthday wishes as usual. The only pictures I could find of her are with her family. She is the baby after all .
Not every child is as blessed as my grandchild are and that’s why we have a special Youth Day today. Children should all be loved and nurtured, but sadly some are not. There are countries that are so poor there’s not enough food to go around let along birthday cards. Thankfully all of mine live here in the United States and have very loving and caring families. They’ve never had to want for much of anything.
On the menu for today here at my house is
Chicken and Veggie Fajitas
These are a versatile skillet chicken fajitas designed to work with whatever vegetables you have on hand. The key is to slice all the veggies to approximately the same size so they cook evenly.
2 tsp. olive oil
1 lb. boneless, skinless chicken breasts or thighs, cut into strips
4 c. thinly sliced vegetables, such as onions, bell peppers, zucchini and/or mushrooms
1 1/4 tsp chili powder
1/4 tsp salt
4 8 inch whole wheat tortillas
1/2 c prepared quacamole
1/2 c. plain Greek yogurt
1 lime cut into wedges
1/4 c. cilantro leaves, chopped
Heat oil in a large wok or cast iron or other stick resistant skillet. over high heat. Add chicken, vegetables, chili powder, and salt; cook tossing with tongs occasionally, until chicken is cooked through and the vegetables been to brown.
Meanwhile, stack tortillas and wrap in a barely damp, clean kitchen bowl or paper towel and microwave on high for 30 to 45 seconds
Divide the chicken and vegetable mixture among the tortillas. Top each with 2 tablespoons guacamole and 2 tbsp. yogurt. Serve with lime wedges and garnish with cilantro if desired.
Serving size: 1 Fajita - about 1 cup of filling per fajita
Today is also my day to make the menu for next week as I’ll be preparing my grocery list .
Monday- baked chicken breasts, large garden salad with tomato and onion and 1 cup croutons, topped with on tablespoon oil and vinegar.dressing
Tuesday - sirloin steak, mashed potatoes, cooked spinach and fresh green beans
Wednesday - roast Turkey breast, baked beans, cooked carrots and kale
Thursday - Lasagna , garden salad, with salad dressing
Friday - baked talipa fillet , green beans, brown rice and garden salad
Saturday - Pork loin roast, garden salad, oil and vinegar dressing, baked sweet potato, and asparagus.
Sunday - Leftovers from Saturday

I just love seeing all your family photos, enjoy them so much. Happy birthday to your little grand! Your menu sounds great, and when you mentioned fajitas I realized how long it's been since I've made them. That's going on my list for next week. Enjoy the day Ma :)
