Today is National Banana Split Day which which is a perfect treat for a warm summer night.
The split is a variation of the traditional Ice cream sundae and is usually served in a special dish called a banana boat. It’s easy to make, but you’ll need quite a few ingredients. First split a banana and place on either side of your boat. Then add three scoops of ice cream in between — one chocolate, one vanilla and one of strawberry. Generously top the chocolate scoop with hot fudge , the vanilla with candied pineapple, and the strawberry with strawberry sauce. Next swirl whipped cream over each scoop. Finish off with a sprinkle of nuts and a few maraschino cherries. Yum!

I love banana splits and usually have bananas on hand along with vanilla ice cream. But sometimes I get neapolitan just so I’ll have the different flavors on hand. As far as toppings go, I usually use some jam or jelly in the different flavors and I always have some Hersheys chocolate syrup in the cupboard but not always hot fudge sauce. I love the cherries on top too and put more than the usual amount of them on top.
I’m getting hungry for one just talking about it.
Anyway, I’ll have dinner before dessert today and on the menu is
Asian Talapia with Stir Fry Green Beans
serves 4
4 to 5 tilapia fillets
1/4 c.soy sauce
1 tsp. ginger
1 tsp sesame oil
1 clove garlic
1/2 c. water
1 lb. fresh green beans, trimmed
2 tbsp. water
1 tsp canola oil
Nonstick cooking spray
1/4 c. sliced green onions
Toasted sesame seeds for garnish, if desired
Rinse fish, pat dry with paper towels. Place fish in a shallow baking pan.
For marinade, stir together soy sauce, ginger, sesame oil, and garlic in a small bowl. Pour over fish , turning to coat. Cover with foil and marinate at room temperature 20 minus. Drain fish, reserving marinade. Add the 1/4 cup of water to reserved marinade.
In large skillet, combine green beans and 2 tbsp. water. Cook covered, over medium high heat for 5 minutes, stirring occasionally. Add oil, cook covered about 5 minutes more or until beans are tender. Cook uncovered 5 more minutes, stirring frequently. Transfer beans to serving platter, cover, keep warm.
Meanwhile coat a large skillet with cooking spray. Heat over medium high heat. Add fish to hot skillet. Cook 6 to 8 minutes or until fish flakes easily when tested with a fork,,turning once. Sprinkle beans with the sesame seeds if desired and orrange fish on top of beans.
Add the reserved marinade to skillet; cook and stir over medium high heat, 1 minutes. Strain through a sieve, and drizzle marinade over fish; sprinkle with green onions.
I’ll be having this with applesauce and cottage cheese, one of my go to salads when I don’t have fresh greens.
I have no banana spit pictures to share today, but I do have some of two of my grandchildren who will be 2021 graduates this coming year. These are their senior pictures. First is our Angel and second is my Sunshine boy who always has such a wonderful smile. I’m hoping this will be a great school year for both of them, and all my grandchildren, to remember.

Hoping for a sweet ending to this 2021 school year!
I sure hope they both have a good school year too! Once again your dinner sounds delicious. I haven't had a banana split since I was a kid, and of course now I want one. I guess I had my fill of sweets today, I made homemade doughnuts this morning. Have a great day Ma :)
Just reading this I, too, am getting hungry! Cant wait for cooler weather to start using our oven again. Hope and pray that your grands -- and all young people -- have an super, albeit unusual,senior year!
How exciting to have two senior grandchildren Ma! Hope they will have a successful year and can do lots of fun senior activities.
