Today is Wiggle your Toes Day which is a time to move a certain part of your body, your toes. It’s all about those ten little friends that spend most of their life inside socks and shoes, but not today. Your toes are supposed to lose it on their own special holiday and dance, move, work out and wiggle around freely.
Your toes are the center of attention today so wiggle them around !

While it is still warm out and we don’t need to wear socks, it’s the perfect time to give our toes some freedom. Summer is the time I enjoy my flip-flops more than not. There is no need for socks on our feet, we need to keep them cool.
I’ve another new recipe to try out today because the menu says it’s time to make Cod with tomato cream sauce, and steamed broccoli.
I don’t have cod on hand but I do have tilapia and that will be what I’m using. The rest of the recipe will remain the same.
Cod with Tomato Cream Sauce
1 1/4 lbs. cod or talapia fillets, cut into 4 pieces
3 tsp chopped fresh thyme
1/2 tsp salt
1/4 tsp pepper
1 tbsp. extra virgin olive oil
1 shallot chopped
2 cloves garlic, minced
3/4 c. apple cider vinegar
1 14 oz can diced tomatoes
1/4 c, heavy cream or half and half
1/2 tsp cornstarch
Season fish with 1 tsp. thyme, 1/4 tsp. salt and pepper. Heat oil in large skillet of medium high heat. Add shallot, garlic and 1 tsp thyme;
Cook stirring until beginning to soften, about 1 minute. Add vinegar, tomatoes and fish to pan. bring to a simmer. Cover and cook until fish is cooked, 4 to 6 minutes. Transfer fish to a plate, keep warm
Whisk cream and cornstarch in a small bowl. Add to pan along with the remaining teaspoon of thyme, and 1/4 tsp. salt. Cook, stirring for one minute. Divide the fish and sauce among 4 shallow bowls.
Serve with steamed brocolli or a mixed greens salad.
Today is another follow up appointment with my doctor. Since I’ve been monitoring my blood pressure, I know the pills I’m currently taking have not made much difference at all so I suppose he’ll try a new prescription. Oh well, it took some time for me to get in the shape I am so it’ll probably take some time to set it right. At least I’m now eating much healthier than I used to and it should eventually make me healthier too.

Every day is wiggle your toes days for me. my entire shoe collection is flip flops. I don't even own any other kind of shoes anymore. I have at least 30 different pairs. When I retired I said I'm never stepping foot outside again if it's too cold to wear flip flops lol. Good luck at your appointment today. Let us know how it goes!
What a cute collection of flip-flops. Unfortunately, I've never been coordinated enough to wear them ... but then I've not tried for at least 40 years. (What's that you just wrote about making mistakes? LOL) Your recipe sounds remarkably like one I used to make with frozen tomato bisque and halibut -- before it became so pricy. Best of luck for your doctor's visit!
I love all your flip flops!! Back when I was a child we called them 'thongs.' Now that word mean a whole nuther thang!!
I bet you wish you were wiggling your toes in sand Ma! I like that cod recipe! I bet it was delicious! Do your blood pressure readings at home match up with the blood pressure readings at the doctor's? I wonder if your blood pressure machine needs to be calibrated. I hope the doctor gets you on the right combination of medicine but you certainly are eating healthy for sure!
