ON THE BRIGHT SIDE
FOR THURSDAY, AUGUST 20TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!

Today is National Lemonade Day, which honors a favorite summer beverage. It originated in the Mediterranean region in the 13th century and made it’s way to Europe. From there, it arrived in America. The beverage was sold as an everyday refreshment and as a tonic, used to treat colds and other ailments. In France you could purchase a glass from a street vendor known as lemonadiers.
To celebrate today, make your own homemade lemonade to enjoy. Dissovle 2 c. of sugar in 1 cup hot water. Then stir in 2 c. freshly squeezed lemon juice and 1 gallon of cold water. Pour into glasses filled with ice and garnish with a lemon slice and a sprig of mnt. Enjoy !
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
I love lemonade in the summer, there’s nothing much of anything so refreshing. I’ve made a lot of pitchers of it over the years and that’s what todays pictures are of - lemonade. I can never make enough of it it seems to go really fast around here.
I did make a menu up for next week yesterday but forgot to post it. The Menu for next week is:
Monday - Balsamic Dijon Chicken
Tuesday - Asian Tilapia with stir fried green beans
Wednesday - Sheet Pan Chicken with Brussel Sprouts
Thursday - Pork Chops with Broccoli
Friday - Cauliflower Rice Stuffed Peppers
Saturday and Sunday - Mexican Cabbage Soup
On the menu for today is:Baked Tilapia Fillets
Baked Tilapia with Lemon and Parmesan Cheese
4 talipia fillets
2 tbsp olive oil
2 cloves garlic, minced
1/4 tsp salt
ground black pepper
1 1/2 tbsp. freshly squeezed lemon juice
1 c. shredded Parmesan cheese
1 tbsp, chopped parsley
lemon wedges for serving.
Preheat oven to 425 degrees. rinse fillets with cold water. Pat dry with paper towels. Arrange in layer in baking dish. Add the olive oil, garlic, salt and pepper, cayenne pepper and lemon juice.
Sprinkle the Parmesan cheese evenly on top . Top with parsley.
Bake the fish for about 10 minutes until cooked through. Serve immediately with fresh lemon wedges. I’ll be having this with a side of oven roasted broccoli which I tossed in a sauce of olive oil, soy sauce, honey and garlic then put in the oven when I baked the tilapia for about 15 minutes

There is nothiog quite so refreshing as a glass of fresh lemonade .
I haven't made fresh lemonade in years, I need to make a batch! Your menu for the week sounds delicious - enjoy!
Yum with the tilapia recipe Ma! And I like your menu for the week. I like making meals on the sheet pan. Will start doing more of them when we use the oven again in a few months. All healthy yummy meals!! I haven't had lemonade in a bit but I do like to add a splash of lemon juice to my water.
betty
I don't think I've ever tasted tilapia, but your recipe sounds mighty good! I've a favorite tumbler similar to your green one that I carry around with me. Someone once told me if you use a straw, you're inclined to consume more. I thought that sounded like a bunch of 'hooey' but darn if she wasn't right!
Tilapia is delicious and easy to cook. We love it.
Italy sells "Limoncello" which is a realllly high alcoholic lemonade. Excellent.
