Today is also National Girlfriends Day which is a day to step back and appreciate these life long friends.
Girlfriends are the women you can always depend on. Whether you call on them to share exciting news, to have a shoulder to cry on, or just to hang out with, your girlfriends are always there for you. That is why there is an entire day dedicated to these friends, sisters, mothers, and daughters. They are all essential parts of our lives!
To celebrate today, make sure you let them know how important they are and let them know you are thinking of them.

THOUGHT FOR TODAY
This granddaughters birthday party was last weekend and she shared the date with her brother as his birthday came when we were shut down and hadn’t been able to travel. I’m so thankful I was able to share her special day. I so enjoyed seeing her and singing Happy Birthday in person instead of through a card.
She may be growing up but she is still tiny and petite and totally a girly girl. Although she still enjoys boyish things like fishing and usually does a good job of it too. Her clothing is important to her and she loves dressing up. She has a big closet full of all her favorites and picks out what she wants to wear on her own each day. They live out of town, so I don’t get to see her often and that’s why visits to see her are so very precious to me as is she.
This is my day to cook for the weekend. I won’t be going anyplace or having company, but I love having leftovers to heat up on Sunday so I don’t have to cook.
Today’s meal is:
Pesto Baked Pork Chops
4 pork chops
2 cloves garlic, minced
2 tbsp. olive oil
1 c. flat leaf parsley plus more for serving
1 tsp salt
1/4 tsp pepper
8 small shallots, peas and ends trimmed.
To make these chops: pulse garlic, oil and parsley in food processor until finely chopped. season with salt and pepper as desired.
Make small cuts on fat rimming around the pork chops, this will prevent them from curling. Season with pepper and spread herb paste on both sides. Place in a large bowl and marinate for at least 3 hours in refrigerator.
Bring pork chops at room temperature, Place a rack in lower third of oven. Preheat to 400 degrees . Sear pork chops in a large skillet over medium high heat and cook on one side until golden brown, about 2 to 3 minutes.
Remove park chops from the skillet and transfer to a baking pan with the cooking juices, cooked side up. Spread remaining paste on pork chops . Add shallots to the pan and transfer to the oven. Roast pesto pork chops for 6 to 8 minutes until crisp but tender and juicy in the middle.
Transfer the pesto pork chops to a plate and pour any pan juices over the top. Tent loosely with foil and rest at least 5 minutes before serving with shallots, parsley, and pan juices. Enjoy !
I’m going to serve these with a baked sweet potato, fresh green beans and some homemade applesauce. I have some apples that need to be used up.
