Today is Relaxation Day which is a day to sit back and do nothing and relax. Relaxaion is the emotional state in which there is an absence of arousal that could come from the sources such as anger, anxiety, or fear. Relaxatiom os a form of mild ecstasy coming from the frontal lobe of the brain in which the backward cortex sends signals to the frontal cortex a mlld sedative.
Relaxation helps improve coping with stress. Stress is the leading cause of mental problems and physical problems, therefore feeling relaxed is a beneficial for a persons health. When we are stressed the sympathetic nervous system response is activated because we are in a flight or fight response mode, over time this could have negative effects on a human body.
So relax today and free yourself from stress.

I usually set aside Sundays every week as my day to rest and relax but in honor of the holiday, I’ll be relaxing the whole weekend this week. Truth be told, ever since I retired, I rest a whole lot more than I work anyway. I’m too blessed to be stressed.
This is my day to cook for the weekend so there will be a little to be done, but then I won’t have to cook for the rest of the weekend.
On the menu today is:
Pork Loin roast, baked sweet potato and asparagus, garden salad, oil and vinegar dressing
1 lb. pork tenderloin
2 tsp. paprika
3/4 tsp salt
1/2 tsp ground black pepper
1/2 tsp cumin
2 tbsp. oil, divided
2 sweet potatoes , peeled and cut into 8 wedges each
1/4 c. cider vinegar
3 tbsp honey
1 tso, Dijon mustard
2 tsp. thyme
1 tbsp, unsalted butter
Preheat oven to 450 degrees. Sprinkle pork evenly with paprika, salt, pepper and cumin. Heat a large skillet over medium high heat. Add 1 tbsp. oil to pan , swirl to coat. Add pork to pan , cook 8 minutes turning to brown on all sides.
Place potatoes on a baking sheet, drizzle with remaining 1 tbsp oil. Bake at 450 for 10 minutes. Add pork to pan with potatoes, stir potatoes. Bake at 450 for 15 minutes or until potatoes are tender and temperature registers at 140 degrees when inserted in the thickest portion of the tenderloin.
Remove pan from oven. Let roast stand 5 minutes before cutting into slices. Combine salt , vinegar, honey, mustard, and thyme in a small pan and bring to a boil. Cook 3 minutes or until thickened. Add butter and stir with a whisk until melted. Drizzle sauce over potatoes. Serve with pork.
Serves 4
Note: I roasted the asparagus right along with the pork and sweet potatoes. You just wash asparagus and pat dry. Trim off the tough thick end of each stalk. Spread on baking sheet, Drizzle with oil , Use your fingers to gently rub each stalk evenly. Sprinkle with salt and pepper. You will know when they are done as the asparagus turns bright green, the stems are tender and the tips get crisp from roasting.
I’ve not tried this recipe before but it does sound delicious and I’ve not had fresh asparagus in a long time. Yum!
Yesterday was quite hot and humid with temps around 90 degrees The weekend should be some better with temps in low 80’s and high 70’s. We’ve got a good chance of rain on Sunday so I’ll be staying in and making my own sunshine!

Give yourself some me time today. Rest, relax, renew and refresh.
I have no problem relaxing and do lots of it these days, still not caught up after working hard for so many years lol. Love the beautiful photos. Funny, I was just working on my menu plan, I'm making a whole pork loin tomorrow evening and have some great ideas for the next few days of leftovers, plus there will still be lots left for the freezer for future meals too. Hope you have a perfect relaxing weekend :)
Looks like your son's family was having a lot of fun while they were relaxing!! I bet it was so pleasant being on the water like that! I like your recipe again Ma! Have to wait to cook it until it cools down here but it sounds yummy!!

That's so nice to see another set of pictures showing DS#6 and family doing things together as a family!
We love pork loin and, in fact, have it often -- usually done in the slow cooker. That's pretty interesting about roasting the asparagus and knowing by the color when it's just right. Tom's daughter does something similar on their grill.
Such cute pictures of the family outing. The recipe sounds really good.
