Today is National Watermelon Day which is a delicious fruit that has become a staple at family cookouts and picnics. Watermelon is 92 per cent water so it’s no wonder that they are so refreshing.
There are around 300 different kinds of watermelon in the U.S. and Mexico. You can find red, pink, white and yellow varieties in various sizes and shapes.
Watermelons are usually quite large and many country fairs award prizes for the biggest ones. According to the Guiness Book of World Records, the heaviest watermelon weighed in at 350.5 pounds.
To celebrate today have some watermelon for dessert tonight. Slice it up and eat it plain, cook it on the grill, mix it salsa, or blend it into a cool and fretting drink. Enjoy!

I love watermelon and my favorite is red. I often get the baby size ones because the regular size is way too much. They are very sweet and flavor filled
On the menu for today is Salmon patties, fresh green beans and sweet potatoes. So I thought I’d share the recipe for the Salmon patties.
Salmon Patties
1 large egg
1 15 oz. can salmon, drained
1/2 c. seasoned whole wheat bread crumbs
1/4 c. plain Greek yogurt
1/2 tsp. dijon mustard
1 tsp white vinegar or lemon juice
1 tsp onion powder
1 tsp garlic powder
1/4 tsp. cayenne pepper
2 tbsp. chopped parsley
1-2 tbsp. extra virgin olive oil
In bottom of large mixing bowl, lightly beat the egg. Add the drained salmon , the bread crumbs, yogurt, vinegar, onion powder, garlic powder and cayenne. With a fork lightly mix to combine, breaking apart the salmon. Gently stir in the parsley.
Scoop mixture by 1/3 cupfuls and shape into 6 patties that are about 1/2 inch thick. Arrange on plate.
In a cast iron skillet, heat 1 tbsp. of the oil over medium heat. Swirl to coat . Brown patties on both sides, until outsides are deep golden brown and cooked through, about 5 or 6 minutes.
When flipping the patties, be gentle. Enjoy immediately and serve with greek yogurt and a squeeze of lemon and a sprinkle of fresh parsley
We had rain off and on all day yesterday and will probably see scattered showers again today. So it’ll be a day to make our own sunshine here.
I had a nice visit with my sister yesterday, our picture is shown below, and it felt good to get away and out of the house for awhile, but today I’ll be staying in and getting some housework done.
The other pictures are of DS#6 and his family having some fun on the river this past week. They are enjoying summer while its here.

Tom sure loves his watermelon, as well. Only he looks for the pre-cut quarter or half pieces because he knows I won't help eat it. LOL. Now those salmon patties? I don't have any canned salmon, but do have everything else on your list and figure I can just thaw a couple frozen filets. Good to have a recipe! Thanks!
