Today is National Waffle Day which are a delightful breakfast food that can be paired with almost any topping. Butter and maple syrup, fresh futon and whipped cream, a big scoop of ice cream or even a helping of fried chicken.— the choice is yours.
It was on this day in 1869 an American inventor named Corneilius Swartwout received the first U.S. patent for a waffle iron. Waffles are said to have originated in Ancient Greece. The Greeks would cook flat cakes called obelios between two metal pans held over a fire. Today all you need is a waffle iron and a yummy recipe for waffle batter.
To celebrate the day, cook up some homemade waffles and have breakfast for dinner tonight.

I’ve waffled before, I’ll waffle again.

I won’t be having breakfast for dinner tonight as I’ve been trying to stick to a healthy eating plan that I make a week ahead. Today’s meal will be
Balsamic Dijon Chicken
1 1b. skinless boneless chicken breast halves
1/3 c. Dijon style mustard
3 tbsp. balsamic vinegar
2 cloves minced garlic
1/2 tsp. thyme or basil, crushed
Place chicken in a large resealable bag or in a shallow dish, set aside
For marinade: In a small bowl stir together mustard, balsamic vinegar, garlic and thyme until smooth. Pour marinade over chicken. Seal bag and turn to coat.Or cover the shallow dish and turn chicken to coat. Marinate for 4 to 24 hours turning occasionally.
Drain chicken, reserving marinade. Place chicken on the rack of uncovered grill, directly over coals. Grill 7 minutes, brushing with reserved marinade. Turn chicken, brush again with marinade. Grill for 5 to 8 minutes more or until chicken is tender and no longer pink. 165 degrees . If desired sprinkle with thyme sprigs.
I plan to have this with baked sweet potatoes and a side salad. It’s a good marinade because it doesn’t have any oil or added sugar.
Having no pictures of waffles to share, I’ve put some on my page today of DS#6 and kids efforts to make Tye-dye face masks. They said they would be saving one for me.

How cute with the tied dyed masks! Great project to do! I like your chicken recipe! Going to make that soon. I do like Dijon mustard. Waffles are so yummy for breakfast! I haven't had a real one in ages but have had a lot of frozen ones over the years.

What a fun project, turning out those 'one of a kind' masks! I recall my mother's OLD waffle iron -- even the fabric cord. Yet in those days before non-stick cooking spray, what a job she had cleaning it. Perhaps that's why waffles weren't on the menu very often. Your Balsamic Dijon marinade sounds tasty, indeed.
