Today is National S’mores Day which are a delicious treat made from three simple ingredients - graham crackers, toasted marshmallow and melted chocolate bars. Yum!
The first official s’mores recipe was published in the Girl Scout hand book in 1927, but culinary histories believe that the tradition began much earlier. Over the years, the recipe was passed from camper to camper and eventually became the most famous fireside dessert. Ever wonder why it’s called a s’more? Because you’ll always want some more of this decadent sweet.
Today make a backyard camp fire and have some s’mores. No bon fire? No problem you can toast marshmallows in a toaster oven or microwave. Happy National S’mores Day!

1) Sometimes no matter how badly you want something — all you can to is wait.

But when you finally get to enjoy It — DELICIOUS!
2) Slow and steady wins the race.
When roasting the perfect s’more slow is the way
3) It’s what’s inside that counts.
The marshmallow may look golden brown on the outside, but if you take it out too quickly, you’ll have a hard lump in the middle of your s’more.
4) Life is messy
Learn to enjoy life’s messiness. Sometime the goo is the Good Stuff in life.
5) the happiest people can make the best of any situation.
Nothing tastes quite as yummy as a marshmallow accidentally set aflame. Failure can be sweet and delicious.
Back in the day, I toasted lots of marshmallow around a campfire. I even had my own camper for several years and campfires were my favorite thing about camping. We all had s’more ingredients to share. Using chocolate covered graham crackers was one of my favorite things to eat. But these days they are on my forbidden list. I’m supposed to be watching what I eat as far as sweets go and so far I’ve not had a s’more this summer.
Instead I’m trying to eat healthier. On the menu for today is supposed to be
Gilled Salmon with Cilantro and Ginger Sauce
1 tbsp olive oil or toasted sesame oil, if you prefer
1 tbsp fresh lime juice
1 tbsp chopped fresh cilantro
1 tsp fish sauce
1 tsp minced seeded red chili or jalapeño pepper
1 tsp grated ginger
1 tsp honey
1 medium clove garlic, mashed into paste
1 pound salmon fillet about 2 inches thick, preferably wild caught, cut into 4 pieces
1/4 tsp ground pepper
1/4 tsp salt.
To prepare sauce: Whisk oil, lime juice, cilantro, fish sauce, chili pepper, ginger, honey and garlic in a small bowl. Reserve 1 Tabs of such in separate small bowl for basting.
To prepare salmon: Preheat grill to medium high. Pat salmon dry with paper towels, Rub oil all over salmon. Spring both sides with pepperoni salt. Place salmon on the grill, skin side up. Grill until the salmon lifts from the grates without sticking, about 4 minutes. Flip the salmon and brush with received 1 tbsp. sauce. Cook until salmon lifts from he grades without sticking and flakes with a fork. A couple of minutes more. Serve wit the remaining sauce.
Fresh lemon peppered seasoned green beans will be my side dish for this savory meal. Salmon is very good and good for you too. After all I ate yesterday, this light meal is just what I need. The cake didn’t come out of the pan the way it should have so I had to paste it together with lots of frosting. Not the best looking cake I’ve ever made, but it still tasted good.
That’s what today’s picture are of, yesterday’s party.And instead of the salmon I’ll be eating leftovers that DS#5 sent home with me from the party.

Beautiful photos and so glad you had some time with your family. The recipe sounds delicious but leftovers are even better! Now I'm going to have to add s'mores to my list of dessert ideas. I can't remember when I last made those - yum!
Love that last picture of you and your son, Ma! And the birthday dinner sure looks delish. Thank you so much for sharing a 'how-to' on the grill. Tom loves to grill, but is unfamiliar with doing salmon. (I'm copying and pasting this for my on-line recipe box.)
Looked like yummy food at your son's celebration Ma! I do like S'mores but haven't had them in years. Definitely a camping treat! Good lessons learned from them too!
