Today is National Lighthouse Day which was an approved as an Act by the United States Congress, for the establishment and support of lighthouse, beacon, buoys and public piers on this day is 1789. This piece of legislation commissioned the first Federal lighthouse, which was constructed at the entrance of Chesapeake Bay. Two hundred years later Congress designated August 7th as National Lighthouse Day to commemorate this important moment in history and to celebrate these beautiful structures.
For centuries lighthouse have served as beacons of light, guiding ships safely to harbor through storms, fog or dark of night. To celebrate today, take a drive by any local lighthouse or donate to the lighthouse preservation society.

Today I’m showing pictures of the last visit I made to a lighthouse some years ago now with my middle sister. It’s a precious memory and I’m lucky to have pictures of that visit with her as she is no longer living, but the memories live on.
This lighthouse sits on the shores of Lake Erie about an hours drive from here. It was a beautiful fall day after Labor Day and not many visitors were around so we practically had the place to ourselves.
Today’s recipe is for Chicken Cauliflower Fried Rice
1 tsp oil plus 2 tbsp., divided
2 eggs, beaten
3 scallions, thinly sliced, whites and greens separated
1 tbsp. grated fresh ginger
1 tbsp minced garlic
1 lb. boneless skinless chicken, cut into 1/2 inch pieces
1/2 c. diced red bell pepper
1 c peas
4 c. cauliflower rice
3 tbsp. soy sauce
1 tsp. sesame oil, optional
To make cauliflower rice place cauliflower in food processor until broken down into rice like granules. One 2 lb head yeilds about 4 cups.
Heat 1 tsp. oil in large flat bottomed pan or heavy skillet over high heat. Add eggs and cook without stirring until fully cooked on one side. Flip and cook just until cooked through. Transfer to a cutting board and cut into 1/2 inch pieces.
Add 1 tbsp. oil to pan along with scallion whites, ginger and garlic; cook, stirring until scallions have softened, Add chicken and cook, stirring for 1 minute. Add bell pepper peas; cook stirring until tender. Transfer everything to large plate
Add remaining oil to pan; add cauliflower rice and stir until beginning to soften. Return chicken mixture and eggs to pan. Add soy sauce and sesame oil if using, and stir until well combined. Garnish with scallion greens.
Serves 4
I don’t have scallions but am using green onions instead. There is not a whole lot of difference. For all intents and purposes they are the same thing.

For some reason, this post didn't show up on my reading list -- so I hopscotched over from your other blog. Lighthouses and their history are fascinating but I've never seen one up close. I don't own a food processor, but will be on the lookout for cauliflower rice on my next trip to the supermarket.
