Today is National Senior Citizens Day which is when we celebrate the people that are part of the fastest growing demographic in the world. According to the traditional definition, a senior citizen is anyone older that 60 years of age, but this seems relatively young in today’s society. When it comes to new technologies, adults above the age of 55 represent 65 present of all early adopters. This demographic is also the most politically engaged segment of the population. Almost 80 percent of all senior citizens vote in a presidential election, whale over all voter turn out is usually around just 50 percent.
President Ronald Reagan proclaimed the first National Senior Citizens Day id 1988. In his explanation he wrote: Older citizens are reinforcing their historical roles as leaders and as our patrimony and sense of purpose as a Nation.
In honor of today let your favorite senior citizen know that you are thinking of them. If you are a senior citizen yourself, take time to relax and enjoy the day!

I’ve been a senior citizen for quite a few years now and I’ve got to say I’m entirely enjoying it. Except for the fact that I’m moving slower these days, I’ve been able to enjoy retirement and my grandkids. It’s been 10 years since I retired and I’m still able to live on my own and pretty much do what I want. I’m contented to be who I am and content with what I have. For true enjoyment, there’s nothing like slowing down to enjoy the best things life has to offer. There has not been a day gone by that I wished I was still working.
Thanks to DDH I was able to retire on almost the same amount of money that I made when I had a job. So it was a no brainer whether I’d retire or not. As a widow, I get what retirement he would have had. He always made more money than I did except when he started his first job, I made 25 cents more an hour than what he did. But that didn’t last long and before we knew it, he made double what I did. Secretaries are not high on the pay grade.
On today’s menu is: Leftover Pork Loin Roast which I heated up in the crockpot to make barbecue pork sandwiches with.
Leftover Pork Roast BBQ Wrap
Serves 2
1/2 lb. cooked pork roast shredded
2 flour tortillas
1/4 cup barbecue sauce
4 slices Cheddar Cheese, halved
1 small onion, thinly sliced into rings
1 pinch salt and grown black pepper to taste
Preheat oven to 350 degrees. Spoon the shredded pork on each tortilla, top each with 2 tbsp barbecue sauce, 4 cheddar cheese halves, 1/2 the onion rings, salt and pepper. Fold opposing edges of tortilla to overlap filling. Rolle 1 of the topping edges around the filling like a burrito shape. Wrap each with aluminum foil and place on baking sheet.
Bake in preheated oven until cooked through and cheese is melted. 15 to 20 minutes. Cut each wrap in half to serve.
I had some leftover baked beans to have with these making it an easy peasy dinner. I only wished I’d had some cole slaw to have with it.

Great pictures Ma!! I sometimes have to step back and remember at 62 years old I am considered a senior citizen. It doesn't bother me but I do like some discounts we get!
